The item comes with 2 rubber gasket rings to make a perfect and safe seal. It has a double relief valve for added safety. The sturdy lid locks down during canning or cooking; an inner sealing ring keeps the steam in. In addition to a pop-up pressure indicator and a double steam release mechanism, there is an overpressure plug that will let off steam if it builds up excessively. The U.S.D.A. recommends pressure canning as the only way to can meat, fish, poultry, and all vegetables. This unit has the capacity needed for preparing large quantities of food and pressure cooking inexpensive meat cuts to juicy tenderness in a short time. It is stainless steel with a composite bottom for better cooking. I have had this for a year and haven't even been able to figure out how to use it. No clear instructions at all. Tried contacting Westinghouse. Tried looking for videos on youtube. Even tried posting on social media to see if anyone knows how to use this.... NOPE! Nobody does, not even Westinghouse.
