The media could not be loaded. Overview: I've used this skillet to sauté vegetables, fry eggs, and cook a dish with canned beans. For every dish, the pan performed extremely well, with very little sticking; anything that did stick came off in a quick 30 second wash and rinse using only a sponge. I was especially impressed with a veggie sauté that included minced garlic: the minced garlic did not stick to the pan at all (which with cast iron or other pans, it generally does) and everything browned nicely. Due to the extremely quick cleanup, this has become my go-to pan for cooking small to medium size things. Pros: -The cleanup on this pan is extremely easy. I have been hand washing to prolong the life of the pan. You really do not need to put this in the dishwasher. Immediately after cooking, a quick rinse and go over with a soapy sponge does the trick. It takes 30 seconds, for reals! -I like that this is a much healthier alternative to conventional nonstick. My partner loves his nonstick and I love my health: this is a great middle ground. -The weight of the pan and heat distribution is lovely. It works really well when cooking or sautéing anything I have put in it so far. The only thing I cannot speak to is searing meat but my guess is it will do a lovely job without sticking and mess. -The lightweight nature of this pan is extremely gentle on my wrists which are used to hefting cast iron. It feels great! Cons: -I have not really experienced any negative concerns with this pan at this time. I think that if it is treated with care- preferably hand washed, and stored in its cover so that other pots and pans do not nick or scratch it, it will last a very long time. I'd love to see this pan in a large, vertical sided fry pan for large dishes. ... show more

  • A Smooth Operator, But With Some Drawbacks

This Redchef 9.5 inch non-stick skillet has a mix of qualities, some positive ones along with a few that aren’t as helpful to have in cookware. I’ve been using it for various tasks over the past 3 weeks – these are my findings. WEIGHT: This pan weighs in at a mere 26 ounces compared to 3 of my other same-size skillets made by All-Clad and Cuisinart – each of those weigh in at 38 to 39 ounces. The Redchef is a veritable Bantam-weight pan comprised of aluminum, a factor that some newish or less-experienced home cooks might like. By comparison, seasoned cooks will probably prefer a heftier stainless-steel skillet for a variety of reasons, heat consistency and retention being among them. DESIGN: Personally, I’m not a big fan of the pinkish-beige exterior pan color, and I anticipate that the light layer of coating will degrade quickly with time (unlike stainless steel pans). But color doesn’t impact function, so the Redchef pan gets a pass on that trait. What is a problem with the design is the smooth, oval – almost round – handle. That smooth shape is certainly attractive, but it also easily allows the pan to slide or rotate on its axis if the cook’s hand is even slightly damp or oily. It could benefit from a grove or thumb rest, so the user’s hand can get a steadier grip to prevent slippage (see photos). HEATING PROPERTIES: Compared to similar-sized pans, the aluminum Redchef heats up more rapidly than stainless steel. Correspondingly, it also fails to retain that heat, so it cools down more quickly. It also heats unevenly. I used an infrared thermometer to measure the surface temperature around the inside of the Redchef pan on multiple occasions, using both an induction burner and a gas range as heat sources. There was quite marked temperature variation throughout the interior of the pan, something that I don’t find with my heavier non-stick pans that have a stainless-steel exterior. NON-STICK PROPERTIES: This is the area where the Redchef pan earns most of its points – it’s “slick as a whistle” as old folks used to say back in the day. I’ve put the ceramic coating through quite a few challenges, and the pan has performed remarkably well. Basic things like grilled sandwiches typically leave behind minimal reside in any non-stick pan, so for me the primo test was cooking eggs. Fried eggs easily slip out of the Redchef pan, even when using minimal amounts of fat or oil compared to cooking in my other non-stick pans. But scrambled eggs? This is where that ceramic coating really shines. Almost no egg sticks to the pan during cooking, and the tiny bits that are occasionally left behind can be fully wiped away using a dry paper towel. (A frittata didn’t fare as well due to the pan’s lack of heat consistency while finishing it in the oven. Some parts were overcooked on the bottom compared to other sections being underdone – but the frittata did slide out easily, so there’s that to consider.) ♪ ♫ ”This is my egg pan, It’s now my egg pan, It is the Redchef. Goo goo g'joob!” ♪ ♫ (My sincere apologies to Lennon and McCartney …) How long the pan will retain that egg-defying capability remains to be seen, but I’ll keep my fingers crossed. BOTTOM LINE: This Redchef ceramic-coated non-stick skillet shines (literally) when cooking and releasing egg dishes, but its lightweight aluminum construction means it heats and cools both rapidly and quite unevenly. It also has a round, smooth handle that can be difficult to firmly and safely grip unless the user’s hand is completely clean and dry. The 9.5-inch pan currently retails for about $50, while the 8-inch goes for $40, and the 10-inch sells for $60. While similarly sized All-Clad pans often go for three times those prices, the Cuisinart MultiClad Pro line prices are virtually identical to Redchef’s – yet those Cuisinart MultiClad Pro pans perform much better. Considering the Redchef pan’s limitations and drawbacks, I’m not sure it’s a good value – even if it is terrific with eggs. ... show more

  • I love this pan!
I got this pan to try out because my non-stick Calphalon pans were starting to be less than non-stick. I had my doubts because it was a relatively cheap pan, but I was pleasantly surprised once I started using it. I have fried eggs and flipped them with a flick of my wrist with minimal butter or oil in the pan. I have used it to make pasta sauce with sausage, then forgot to rinse it out when I set the pan in the sink. The next morning, all I had to do was spray the pan out with hot water an it looked brand new, never mind that it looked stained red the night before. I have used it to make so many other things and I never needed to scrub the pan, just rinse it out to get whatever was in it before to come out. I can honestly say this is my favorite skillet at the moment. It has a good weight and the handle stays cool too. ... show more

  • Beautiful and functional skillet

This is a really beautiful skillet that functions just as nicely as it looks. It holds heat well, has good surface area and it's truly non-stick. It was a dream to clean up and the surface didn't scratch. It has a great heft to it. My only small gripe is that it doesn't come with a lid. Admittedly, most pans don't, but they should!
