  • Cooking, saving, time, cash, energy and clean-up while making a delicious breakfast.
I removed this from the package on my porch and started to assemble it discarding the boxes. After a moments frustration I took it inside and got a small channel lock to help assemble. I really didn't like how the handle was attached and already imagined this would end up 3 stars or less as a rating. They included an extra threaded shaft which was a mystery for me why. Perhaps there had been some issues with the threads before and this was a patch fix. I thought and still do the design for the handle and attachment was poor. With help of the channel lock, I finally got the handle installed. I think the metal threaded shaft on the pan side was thin and not very well formed. I would hesitate to ever want to remove the handle despite how they show this is oven safe to 530 degrees F when the handle is removed. With all that going on you may be thinking why is the rating 5 stars and not much less? Well, while I still think the handle part needs a redesign, this pan is an awesome cooker. I tested it right away and cooked some sliced fried potatoes in a small batch with some butter, oil, and sliced onion. I was surprised how well the heat transferred as I often have to wait several minutes for my non-stick pans. This morning, I made one of my favorite breakfasts of hash browns, fried eggs and ham. Now, I've made this literally hundreds of times in the past few years. I use a high end 14" non-stick pan with an aluminum core bottom for even heat transfer. The hash browns go first, I use a rotary shredder to fill a 9" shallow bowl with two medium sized Yukon Gold potatoes with the skins, and a half sweet onion (it gets shredded as well to blend with the potatoes). I spray some vegetable or olive oil in the pan, add some butter to melt and flip the shredded mixture into the pan at once then flatten it down with a spatula. At medium high heat or higher I cook 8 minutes flip with two spatulas, and repeat. After flipping 4 or so times and 25 minutes or so shortening the flip interval as they cook, they are done. I remove them and put in two slices of ham and brown them, then lower the heat and cook two eggs over easy at low. Breakfast served at about 35-40 minutes. Thats my baseline. Now the new pan same breakfast. Note, the hashbrowns get a little browned and slightly crispy on the first procedure. Unfortunately, the crispness I get dining out at that place named like something a rabbit or grasshopper might say if they could talk is not the same in the old fry pan. I say that because this one's different. My experience the other day tells me I do not have to heat on medium high or high, but medium does just fine. Flipping the shredded mixture in I started to cook as soon as the butter melted which was in half the time. I turned at 5 minutes hearing the sizzle instead of 8 the first time and the overall time was reduced to 16 minutes for the potatoes. Additionally, they were nicely browned and very crispy like at the dine out place. The ham browned in two minutes a side, and I turned the heat off and was able to cook the eggs in about 3 more minutes with the residual heat. My non-stick won't do that as well, so I normally turn it to low. Anyway, breakfast done better in 23 minutes instead of 35-40. Less gas used to cook with, and I venture even my AC had to work a touch less to cool down the heat loss from the longer cooking time. Cleanup was a breeze with a soft brush and hot water. Pan shows good heat retention for browning meats or vegetables. Non-flat surface still cooks evenly with little sticking. Thinner that most cast iron type pans and more non-stick with coating. Less weight makes it easier to handle. Instead of straight walls like my non-stick, the arc shaped outer walls make this like a shallow wok. Easier to manipulate my flip turns with dual spatula's. Plus, the outer walls design helps cook items on the fringes instead of keeping it all near the middle. No detectable cool vs hot spots when cooking like my other pan. This shows up when my other pan gets off center to the gas flame. This pan would be capable on an induction cooker as well given the iron content. Too many good things trump the bad handle attachment design, so a five star recommend, or a great pan. ... show more

  • Beefy Cast Iron Pan with Modern Waffled Surface is a kitchen BEAST
We go through a lot of skillets as I fry hash browns almost every morning. The coated pans ultimately scratch and lose their non-stickability. This pan is a real tank of a skillet and is quite heavy. I do have a Lodge cast iron skillet but use it mostly for steaks and such. I wanted to try this with my hash browns, which tend to burn on the Lodge. This pan may have a special non-stick surface over the honeycombed surface, but it seems very permanent! The non-stick quality is great, but I am still learning this is not a steel or aluminum pan, but cast iron, and it gets very very hot. (I've burned my hash browns a few times because my heat was too high.) So remember that when cooking and you will wind up loving this pan. it cleans up very easily unlike cast iron. A little pricey, but I can tell this is a premium product that will last for years to come. Just keep your heat down! ... show more

  • Good Pan but what is the Top Coat made of?
Putting the handle together was not too bad. It may require some jiggling to get it to thread correctly. The wooden handle is well made. The top of the handle is separate from the rod that screws through the wooden handle, which then attaches to the pan itself. There is a spare rod for future use. In order to place this pan in the dishwasher, you have to dis-attach the handle from the pan. I find this to be cumbersome, and unnecessary. The act of removing it from the pan each time, and then re-attaching it after the wash, takes as much time as washing the entire pan by hand. This pan is definitely cast iron in its core. It is heavy (a little less heavy than my real cast iron pan), and quite cumbersome to handle for a small person like myself. Food cooks well, and requires a lot less heat. Edibles do not stick to the pan, which is a plus, and they cook evenly - another plus. For those who are not health conscious, the review can end here. The pan is of good quality and you will love it. For those who are health conscious, read on. In the listing (verbatim), it is stated that: "The pan has a non-stick coating that prevents burning and stains. I cook with all sorts of good fats - olive oil, coconut oil, lard, and tallow, so using less oil is not the issue. I have not owned a non-stick pan since the issue with the PFAs became apparent years ago, and was looking to see it this pan would fit the bill of a 'non-toxic' surface in which to cook. Let's face it, using a non-stick pan is easier than using one where food can stick. I was looking to see what this 'honeycomb' coating is made of, but it bothers me that there is no information on the materials used in its make up. The manufacturer has a phone number in the instruction sheet, but of what use is it when no picks up. I have made 3 calls, each time receiving this message: "At the moment, no one is available to answer your call. Please try again later." Being health conscious, I have concerns about the top coating of the pan. Years ago, we were told that PFAS (now called forever chemicals which are found in just about everything, and which the EPA is now cautioning over) were safe to have in non-stick pans. Now, these chemicals are no longer considered safe. So, what materials are in the top coating of this pan? I do not want to find out years later, that a new technology, deemed 'safe' today, is no longer safe 10 years from now. For this lack of information, I dock the product one star. ... show more

  • Extremely Heavy
This is a high-quality constructed pan, that heats evenly, and cooks well. However, it is extremely heavy and that's while empty. You won't be lifting and flipping food in this pan. Also, this is just my preference but I like a flat-bottomed pan that gives more surface area. Lastly, with the weight of this pan, the handle should have been welded on and not detachable. That said, the handle is holding up so far. ... show more
