  • Great cast iron alternative

We've had this pan for a year as of the time of this review. It does everything you want from a pan: lightweight, incredibly sturdy, and heats like a champ. Once you've built the seasoning up, cooking, cleaning, and maintenance are a breeze. If you're not familiar with cast iron or carbon steel, don't be intimidated by a new regiment. I find it easier to maintain than most other pans. DON'T USE SOAP. While the pan is hot, scrape the bits off with a rigid edge (hard heat-resistant plastic scraper, or metal spatula) Rinse with hot water, scrub with a stainless steel pad, rinse again. ( I like Scotch-Brite Stainless Steel Scrubbing Pads. Skip the chainmail, woven cloths, or copper) DRY OFF COMPLETELY & IMMEDIATELY. I use it daily and season it maybe twice a month or twice a week depending on my mood. Do so by rubbing it with your favorite oil, drop it in the oven for 10 -20 minutes at 400, then turn it off and walk away. Most days I just hang it back up after drying. But I've built a great coating on it. Last thing, when they're new, they are uniform and grey in color. But they're most useful (and IMHO gorgeous) when seasoned, they're shades of brown, speckled, and have a beautiful sheen. Give it a try and be a little patient if you're new.   • Great pan

We love this pan. Evenly distributed heat. Great non-stick qualities. I did season a few times with coating of canola oil and heating in oven at 475 degrees for about an hour each time. I clean up using a little soap and water with non-abrasive sponge. Make sure it’s totally dry. I then put a thin layer of oil before storing. The startup and maintenance sounds daunting but it’s really not. It’s quite fast and easy. Worth it! Great, lightweight alternative to cast iron, but not a total replacement. Edit: After some research, I’ve read that I shouldn’t use soap during cleanup. So, if after light use, I just wipe clean with a paper towel. No soap. No water. If some food residue after cooking … I just use some water and non-abrasive sponge. I will wipe a very thin layer of oil before storing. Also, I occasionally re-season. Be careful to use a VERY thin coating of oil, rubbed into cooking surface. Too much oil will cause uneven surface bubbles. ... show more

  • Warped on first use (glass top stove)

I bought this pan to use on a glass-top stove. The marketing says it "Performs Everywhere. Delivers on all stovetops, grills and direct heat." Well, first time I used it, I put it on the largest burner (9 inches) on my stove. The bottom of this 12-inch pan is about 9 1/2 inches across. On medium heat, within a minute of pre-heating, the pan warped into a shallow bowl shape. I went ahead and used it, allowed it to cool, washed it, and put it back on the now-cold stove. Sure enough, the pan did *not* return to its original flat bottom. So now it is either a lousy frypan or a lousy wok. Either way it's lousy. Do not recommend. ... show more

  • Pan gets better with use

I had high hopes for this carbon steel nonstick pan, but less than two months after use, most of the carbon coating has come off and it’s not very nonstick any more. (I wrote this 2 months ago, but now I think it’s a great pan after using it for 4 months. After properly taking care of the pan after cooking by making sure the pan is dry and rubbing a very light coat of oil in the pan, food is generally sliding off pretty easily the more I’ve used this pan.   • Amazing pan

So, after lots of research I decided on carbon steel pans to get away from all the non-stick potential health stuff. Let me tell you, this pan is amazing. First time using carbon steel, I made sure to wipe down good before use. I heat the pan on medium for a minute or two, then add a little oil before cooking. I've cooked eggs on this almost everyday for almost a month. This thing is as nonstick as a brand new nonstick. The up side is the longer this is used and properly cared for, the more nonstick it'll get. Whereas the nonstick pans will start to lose their coating. This pan does everything I need and more. It heats up quickly, delivers balanced heat levels, and nothing sticks to it! The best part is the cleanup.   • Warp 1, Warp new, now what to do!

I honestly don't know what to do. The pan was beautiful and felt really solid. Several days after my initial purchase I first used the pain on my induction cooktop. The burner was never turned up past 6.5 on the dial. The food cooked evenly and I was very much surprised by the non-stick properties. The pan was allowed to cool to room temperature before any cleaning. Several days later I again used the pan but this time I noticed all the butter was pooling to the outer edge of the cooking surface and it took longer for the food to cook. I later grabbed my stainless steel ruler/straight edge and placed the edge to the bottom of the pan and noted the pain had warped approximately 1/8". I contacted the manufacturer and they recommend to return it to Amazon. Amazon sent me out a new pan within 48 hours. Before even cooking with the replacement pan I checked the botom with the straight edge and found only the bottom edges of the pan touch the straight edge and the bottom is warped causing the center of the pan to be about 1/6" higher than what would be the cooking surface. In short, both the 1st and 2nd pan are being returned. This is quite frustrating! Do I try a third time? Smh! ... show more
