If someone complains about this pan, after using it I realize it's literally user error. It's also people who don't understand what type of pan this is to begin with. This is not a non stick pan, its an enameled cast iron pan. It's meant to do something that nonstick pans are not really meant to do. That is brown things, and build a good crust. Non stick pans can't do that because thier built to not let food stick, which is why thier called non stick. To get color on food efficiently a pan needs to get some brown bits on it. The good news is this pan is easy to clean, all it needs is hot water and baking soda. You let it soak, then easily wipe it out. When you're cooking with this pan you need to use a generous amount of fat. Get the pan hot, add the fat and then brown your meat or veggies. Wait till the food is easy to lift away, then turn whatever you're cooking. You cannot turn the food instantly like you do with a cheap pan, you have to wait until the food easily releases and is ready to be turned. Cheap pans cook extremely quickly because they don't have good heat distribution. So over all this pan works really well. It's best to hand wash it and take good care of it. But understanding how and when to use this pan will help you to achieve really high quality cooking. I love this type of pan for really Browning food. I personally would not use it for things like eggs, I like non stick pans for jobs like that. I think understanding what type of pans work best for specific cooking methods leads to overall realistic expectations. I can literally read through reviews and understand who is complaining because they don't get what the product is supposed to do. So as soon as someone complains that something sticks to the pan. I realize that person actually thinks these pans are non stick pans. I highly recommend this pan for getting color on your dishes. They cook evenly and distribute heat well and that is exactly what you need for food you want a good crust and color on. ... show more

The first skillet I received was damaged, as the picture shows, but Amazon allowed me to exchange it. The second skillet is as good as advertised. I suspect my first skillet might have been a factory second because I've never received a piece directly from Le Creuset with such a noticeable flaw. Some tiny pinholes are normal for enameled cast iron, but this one seemed a bit big to pass normal inspection—and being on a part of the skillet that would be in direct contact with the heat source concerned me. The surface diameter (cooking area) is about 8–8½ inches in the 10¼-inch (26cm) skillet. The heat retention on these is spectacular. I have an electric glasstop stove with 9 settings for each burner. If I preheat the skillet on 3 or 4 for 10 minutes or so, I often have to drop the setting to 2 if I'm cooking for an extended period. If searing a steak, I might go as high as 5 (medium), but I can't imagine ever needing to go higher. All stovetops vary, but the point is that these skillets will get ripping hot—and hold that heat—without ever needing to crank up your heat source. ... show more

I purchased the 9" Le Creuset skillet after my ancient (at least 35 year old) 9" cast-iron skillet developed a crack down the center. I had a grease fire in the drip pan below it and I'm still unclear whether it was the victim or the culprit. I grew up in a home where cast iron was used daily, and know a lot of people are cooking and baking with cast-iron these days. As I type this, 9" Lodge skillets are in short supply -- so I cast my eyes on Le Creuset and decided to take the plunge. I read a lot of reviews from people who purchased the Le Creuset skillet and thought about the purchase for a few days before ordering one in the Flame colorway. I am not sorry I purchased this skillet. I have an old stove with electric elements, and am used to turning the element on low, and letting my skillets heat up. I did the same thing with "Flame", tossed in half a pat of butter, and then a couple of eggs. They cooked beautifully and slid off the bottom of the skillet when I turned them over, without breaking apart (a rare occurrence), and produced the tenderest fried eggs I've ever eaten. I'm looking forward to making sauces, and cooking in this skillet - clearly we get along together! There is something about the quality of the food that comes out of this pan that is a step above, and borderline magical. Similarities to my old cast-iron: they both contain the same volume of water. Differences: (1) the handle of my old cast-iron often stayed cool to the touch with simple sauteing, and the Le Creuset handles can get hot, so have potholders handy; (2) Le Creuset has a handy grab hold on the opposite end -- good to have since it is 3/4 oz. heavier than my old cast-iron skillet; (3) Le Creuset is enameled; after reading the pamphlet I'm buying some teflon whisks and keeping metal implements away from this pan. Do I recommend this pan? Yes, with one reservation. If you are not used to skillet cooking: frying, sauteing, making sauces, browning, etc. I recommend perfecting the art using a cast-iron or standard frying pan until you get basic cooking under your belt. This is an expensive skillet, and deserves to be treated with respect. Also, read the booklet that comes with this skillet; it has a lot of good advice on how to use it. ... show more

  • Beauty at a very high price

TV food shows sold me on the credibility of name. Very attractive in the kitchen. For the price of this skillet you can have all the cookware you need for 3 generations. Just saying. Cast iron, needs higher heat to avoid eggs sticking, little more time in pan than non-stick. All you need is a truly smooth bottom pan (Lodge has a ridge on bottom) to use on most all cook surfaces. Three stars as I see no difference, other than color and bragging rights, compared to regular cast iron. ... show more
