  • Adorable, functional, and not the best for gas stoves

I love this cute little pan. It makes perfect eggs for sandwiches: a bit big for muffins and just right for toast. I find it to be much easier to use than rings, and like all de Buyer pans, it's an amazing pan. It conducts heat, retains heat, and seasons nicely. The compact size exceeds the design limits for most stoves. It's not an issue for induction, as the technology involves a smooth flat surface that only heats the pan on top. Gas has grates with holes/spaces, and this can barely fit flat, but moving a cm can see it lean/fall into the flame. Additionally the flame on most burners has a diameter equal to or greater than that of this pan, which leads to flames along the sides. Coils/electric disks don't have the issue of balance, but they too have a heat source that may be too big. So, I love this pan, and I can make it work on my range. If I had an induction cooktop, it would work much better. ... show more

It is something to know the dimensions but another to see the dimension in context. I suppose the seller is not including a photo of the pan next to something to compare to is designed to mislead. Perhaps not. In any event, I am including a photo of the pan with an medium egg so that the size of this pan is really demonstrated. Also, because of the size, the handle gets way too hot way too quick. For the price you pay, you get very little. Not recommended. ... show more

Be sure to carefully season this pan, just don't use the oven method as the handle is epoxy and won't hold up to 400-500* F heat for more than a couple minutes. I use grape seed oil on a high knit count cloth over 200* F (or so) heat, wipe it on, cook for 10-15 minutes at medium or medium-high heat (on a smaller burner), and then let it cool overnight. I usually do this 3-5 times for a natural non-stick surface. Makes one egg perfectly, keep it heated to make one after another in quick succession. Cooking two eggs at once can be difficult, as it is designed for one at a time. Great for chefs, line cooks, and home users alike. ... show more

This is a wonderful little pan. I say that with caution, as I would not recommend it for someone who is totally new to cooking? This little pan is everything that every other de Buyer pan offers! This is not an inexpensive throw-away type of pan that you could easily purchase at a discount store. This is a carefully produced quality pan that is manufactured with great historic and quality pride in France! I believe it is manufactured with the same pride as the "de Buyer Pro" pans. This is a quality miniaturized single-serving (one egg) professional-quality carbon steel cooking pan! . . . This little pan costs the manufacturer nearly as much to procuce as the largest pan! If you purchase this item . . . Please consider . . . It must be seasoned and you must understand basic cooking with available materials? Thank you!   • Easy to season for non-stick surface. Handle little too short.

Piece of cake to season: Hard scrub washing two or three times with hot soapy water to get all the protective coating off and that's the last time it'll see soap again. Followed the directions to season, "Pour about 1mm of oil into your iron pan and heat it. Once the oil slightly steams, empty it into a recipient and wipe the pan with a paper towel," i.e. used Chosen Foods Avocado oil (because it'll take 500 F, but any high temp oil, like peanut oil, should work) and heated slowly so as not to warp the pan all while gently swirling the oil around so as to coat up the sides until the oil was hot enough to start smoking. Wiped out and repeated steps until it went from a shiny aluminum color to a properly heat tempered black carbon steel color. Went straight for the egg test: added butter to pan and cracked egg inside. It did stick in one or two tiny spots, but I fried some sliced-to-size bacon a couple more sessions while only wiping with a paper towel in between and after about three sessions it's slick as can be now! One caveat is the handle is mighty short. I have to be careful not to get the handle over the heat source to prevent blisteringly hot temperatures, but I just use a hot pad now anyway. ... show more

The same great quality as my other Mineral B pans is there with this one too. Works just like the others. I’m finding that I don’t use it much though. It is literally basically a one egg pan and I rarely only cook just one egg. I find myself cooking at least two eggs for a meal so I end up grabbing my 9.5” Mineral B Egg and Omelet pan. Again though, I can’t knock the quality. It is exactly what it was designed to be. I’ll probably use it for melting butter in while cooking in other pans and such rather than for eggs. However, the fact that I rarely use it isn’t the pan’s fault. Unlike others, I won’t give a great pan a poor rating due to the fact that I didn’t think my purchase through. I’d you want/need a top quality single egg pan I highly recommend this. ... show more
