Seasoned this on top of my gas stove, I simply love this! I was able to get rid of my 2 pans that were well past their prime. I can cook in the oven as well as the stove top, and on the grill come summer time. It's considerably lighter than my cast iron skillets, And a perk, the lid of one of the toss pans, fits this skillet.   • 12.5" Mineral B Paella pan as a "wok"
I bought the 12.5 paella pan and using it as a "wok". Here is how i seasoned my pan. Clean pan with dishwashing soap and warm/hot water. Scrubbed the pan with a scouring pad to remove the bees wax. Fill with water and half a cup of salt and bring to a boil. Removed water and scrub again with soap and scouring pad. Dry pan. Place on stove on high heat for 20-30 (depending on your stove) minutes until all parts of the pan turn blue color. This is called blueing steel. Let pan cool. Rub pan lightly with canola oil using paper towel. Key word here is lightly. You want a very thin layer of oil. If oil start to bead wipe with paper towel. Stop until smoke appear. Repeat wiping pan with oil 3-5 times. Now slice up some ginger and onions and cook them with 1/4 cup of oil to add "flavor" to the pan. Cook until ginger and onions turn black. Did the egg test after the 3rd time using the pan to stir fry and the egg did not stick. Very happy with the pan. This pan replaced my teflon coated wok and my teflon frying pans. To maintain the pan, clean with warm water and scrub with a soft brush. Lightly coat pan with oil before putting away....Side note: the bottom of the pan is in a beautiful blue color after blueing the steel. I like this color so before i use the pan i wash the bottom of the pan with soap and water to remove the thin oil coating. This will keep the bottom of the pan turning brown/black. :) ... show more

For purists, this does the job. There are heat controls especially to crispy rice. This has fast reaction so if you know what you are doing… this makes it work.

  • Perfect size
I own the entire line of Mineral B pro pans, the 32 cm double loop handle country pan and now this one. They have all performed well, never any warpage, reasonably even heating for carbon steel, excellent searing. The 28 cm pro skillet and this one have emerged as my favorites. This one is big enough for almost all pan roasts, yet the double loop handles make it small enough to easily fit into the oven. The 32 cm skillet does fit as well, but needs to be more carefully placed as it’s a tight fit. This one is easy. As to beeswax and seasoning complaints - well, I think that’s a matter of education and experience. I find this pan no different in that category than a matfer or another de buyer mineral b. Basically if you ignore the beeswax and season it like you would season raw cast iron (instead of the provided directions), all is good. Then render some bacon or duck fat for one of the first dishes and all is great! ... show more

  • High quality feel, sturdy, difficult to season
I bought these two pans: - MINERAL B Round Carbon Steel Paella Pan 12.5-Inch with Stainless Steel Handles - MINERAL B Round Carbon Steel Fry Pan 8-Inch I will x-post the review in both product sites hoping it is useful to others. I bought them because I wanted to try a higher-quality carbon steel set of pans, and these turned out after a somewhat exhaustive web search. I was disappointed. - removing the beeswax finish is a pain. Mild soap and water don’t do it, not entirely - Seasoning the pans via traditional oven methods does not work. I believe the smoothness of the surface makes it difficult for the oils to stick to it - The seasoning, as per manufacturer’s instructions, is hard to do (doesn’t seem to adhere) and appears to peel off by barely looking at it - Everything sticks to them. I tried various temperatures, oils, quantities of oils, and regardless of the choice, things stick to them. - The price is considerably high for carbon steel pans. - The handle on the skillet is coated with a silicone layer that limits its heat resistance to 10 minutes in an oven set, at most, at about 200 F. This is ridiculous. Overall, I concluded that my trusty, cast iron and carbon steel pans made by Lodge are far superior. They have a strong, beautiful seasoning, almost nonstick, they take roughly any source and level of heat and they sell for a fraction of the price. After a lot of effort, I managed to get a nice-looking seasoning on the paella pan. At the end of my first attempt sautéing veggies on it, a couple of chunks of the seasoning broke off. I added pictures of these De Buyer pans with my Lodge skillets for comparison. These De Buyer pans probable work well for restaurants that give them a heavy use but, for residential, they might not work. At least, not for me. ... show more

  • Large pan takes longer to heat
It is thicker than I thought it would be so it takes longer to heat. Once hot, it works well in searing on the first side of meat and vegetable. However it does not hold heat as well as a cast iron, so as food is moved, some heat is lost.

  • Great size for stir fries
Great size for stir fries. Seasons well after only one use and becomes virtually non stick. I'm a vegetarian, so vegetables are the main item in the meals I cook. With this pan, vegetables quickly get that browned caramely (I know. Not a word) outside. I debated between this pan and the similar sized de buyer pan with the long handle. Glad I chose this one. It fits in my sink completely, which makes cleaning easier. Now, I only use my non stick or stainless steel when I cook high acid foods. ... show more

I ordered this Paella and am currently waiting for the Oval model with stainless handles as well. These will be my stove top to oven De Buyers. I also ordered two of the 9.5 skillets with stainless handles for similar cooking. A note to future De Buyer purchasers, the standard mineral B cookware comes with "Epoxy" coated handles which are only oven safe to 200 degrees for a few minutes! Anything hotter and longer will damage the epoxy finish on the handles. ... show more
