Description

Outfit your kitchen with this top-flight, exceptionally sharp Tamahagane San Kyoto 8-inch chef's knife--a multipurpose blade designed for chopping, mincing, slicing, and dicing as well as sized for comfort. The blade offers excellent edge retention thanks to the very thin VG5 steel core, which has a Rockwell Hardness of 58-70. Tamahagane's San Kyoto line also features a Damascus pattern that's both beautiful and function as it helps ensure that foods stick less during slicing and dicing--resulting in faster and easier food preparation. Manufactured by Kataoka and Company in Niigata, Japan, Tamahagane knives are produced using modern techniques yet adhere to traditional Japanese principles of knifemaking--its name translates to "precious steel" and has been long associated with the steel used in Samurai swords. Coupled with the Japanese symbol "San," which means brilliant and radiant in English, Tamahagane will shine brightly in your kitchen for years to come. Offering a 3-ply stainless steel clad construction, the Tamahagane San Kyoto knives sandwich a middle V-G No.5 layer with two SUS410 stainless steel layers. The hard VG5 steel layer acts as the cutting edge while the outside SUS410 layers are softer and provide more stain resistance. Tamahagane San Kyoto knives have a minute, beveled edge with an angle between 14 and 15 degrees for a perfect balance of sharpness and strength. The knife is balanced with a stainless steel weight that attaches to the tang and is visible at the heel of the handle. The distinctive yet classically designed handle is made of a strongly compressed laminated linen. It's recommended that this knife not be used to cut on marble, stone, tile or glass surfaces. Hand wash only using a mild dishwashing soap; rinse with water and dry thoroughly with a towel. Backed by a limited lifetime warranty.

I had heard a lot about Tamahagane knives and had always wanted one to go with my collection of Sakai Takayuki, Iseya, Zwilling JA Henckels, Wusthof, and the few (remaining) Shun. This Kyoto knife did not disappoint and after several months of usage, I can safely conclude that it is arguably my best knife, on par with my Sakai Takayuki Grand Chef of the same size. I won’t use it to break shells and cut down a chicken or a roast (I use the German Henckels for those jobs) but for precision slicing for my meals, there is nothing better! This knife is easy to hone to a very sharp degree. It stays sharp for a long time, given regular use of a steel. It sits well in hand with a nice balance when held with the right grip. Beautiful finish, which looks nice when it hangs on the wall. One caveat: If you have very big hands, the blade might not be high enough. Buyer beware the knife that shipped was not the same as the knife pictured. It was not Damascus steel like the picture. I bought this as a gift to my brother but the knife that arrived did not have the folded steel pattern
