Scanpan CTX cookware is available. Previously, I had purchased a Scanpan pro series non stick omelet pan from Scanpan directly and it took seems like a long time to get here from their warehouse in California. So I found the best pan at the best price from another shipper, on Amazon. My item arrived Fast fast. Well this is a large heavy pan, 7 layers of metal with stainless steel on the bottom layer. When firing up this skillet, it's better to put a small film of oil, I use canola oil, first. I expect this 11 inch CTX top of the line to last many years if properly well taken care of. Soak and Clean cooled pan in soapy water using NON abrasive, sponge or pad, no Scotchbrite or brillo. A Fritomann review. ... show more

  • Nonstick ceramic doesn't last, but that's OK.

This is my second or third Scanpan. As reported by others, this is the greatest nonstick fry pan ever. For a year or two, depending on how much you use it. Then the ceramic coating seems to wear out and stuff starts sticking to the pan. In my case I use the pan an average of once a day and the nonstick lasted almost 2 years. Since I'm not a fan of disposable culture and am loathe to replace my frying pan every couple of years, I started to look into alternative options like carbon steel. Meanwhile, I continued to use this pan, but started treating it like a carbon steel pan; in particular allowing it to season. I'm happy to report that if you treat this pan the same way you would treat a carbon steel pan, eventually it's acceptably nonstick again. Just make sure you re-oil the pan whenever you scrub it out. One additional tip which I only learned recently, but which works splendidly: Heat the pan before putting anything in it. A drop of water placed in the pan should kind of dance around -- this tells you the pan is hot enough. So this frying pan continues to be my daily driver and I don't see any need to replace it at all. So I'd rate this pan 4.5 stars. It's not perfect -- that would be if the ceramic never wore out. I bought one of these Scanpans from Sur La Table about 7 years ago (for a LOT more money) and used it for a large number of cooking tasks, one of which was searing steaks, scallops, fish, chicken... it did a great job, but the problem was the atomized oils bonded with the non-stick surface and eventually removed all of the non-stick properties. It became impossible to clean and eventually we had to get rid of it. Still, it lasted 7 years before it didn't work any more, but lesson learned. We tried using cast iron and carbon steel pans, and they work great for searing, but not as well for things like eggs and sticky dishes that really need a non-stick pan. When we saw the same pan come up on Amazon for less than half the price we originally paid for one, we jumped on it! Its SO GOOD to have this pan back again. It makes flawless egg dishes, is great for things like cream sauces, melting cheeses and even reheating thick chilis or beef stew. And cleanup is so simple, literally wash it out with warm water before the pan cools down, or use a soft scrubby sponge and dawn dish soap if it does cool. Just don't use the pan for searing and it should last for decades. I do wish that it came with a good metal lid. ... show more

  • Disappointing Warranty.

My Scanpan lost its non-stick about 2 years after purchase. Attempted to get it replaced under warranty. Rather than send a replacement the manufacturer replied with: "To restore the nonstick properties to your cookware, follow the instructions below. We use these instructions specifically in our test kitchen with great results. Pour water into the pan, filling 3/4 of the pan. Add one tablespoon of baking soda per 2 cups of water. Bring to a boil using medium heat and simmer for 15 minutes. Turn off heat and let stand 30 minutes. Clean the cookware as normal. You may need to repeat this process several times for it to be effective, depending on the amount of build up is present on the cookware. You can also use Bar Keepers Friend. It is a mild abrasive that is safe for use on SCANPAN cookware. You will want to create a paste with Barkeepers Friend and water, and them scrub with a nylon dishwashing brush or scrubby." Not exactly what one has in mind for a warranty when buying an expensive pan. I spent a lot on a whole set. Looks like its up to me to try and save these pans. If the warranty is the driving factor when choosing your high end pans, you may want to look elsewhere. ... show more
