Stain Resistant Blades Made From Molybdenum, Vanadium Steel Using the same thin-blade construction, these knives are made of a high carbon, chrome- molydbenum steel that insures good edge quality while resisting stain and rust. The metal is ice-hardened and tempered to Rockwell 58° and sharpened on both sides (western style). Standard bolster. Chef's knife 8" blade.

Right out of the box extremely sharp, and well balanced. Included in the box were instructions for care and sharpening; unfortunately they are in japanese. Other than that, this seems to be an excellent knife - not the most expensive Misono, but it appears to be a nice balance of quality and price. So far, out of the box, I'm happy, but I will attempt to update this rating after I use it for a while. UPDATE: I had not used this knife in a while, but I had the opportunity today. I had to chop some bermuda onions and cut some veggies,and I thought this would be a good chance to once again try the Misono. My, what a pleasure to use this knife. I do not care for the term "like a hot knife through butter" but this knife cuts effortlessly, and I plan to use it whenever I can. It felt like cutting through room temperature butter while slicing vegetables. I am very pleased with the quality and use it nearly every day.
