The 4.2qt saute pan is extremely even heating on my 10.5" burner of my cooktop. It heats up pretty quickly on medium heat; I rarely if ever turn up the heat beyond medium. It holds an impressive amount of heat; when you throw in food, it sizzles and keeps on sizzling. I also have the 3qt saute;, which is equally impressive. I love the lack of rivets and the Silvinox finish. I have several Demeyere pans, and the finish is the same as the day I bought them. Other SS pans darken with use. Argh, this pan creates a hot spot so it only is cooking on the one part of the pan touches our glass top stove. An expensive pan that doesn’t cook evenly? I feel like an idiot who spent way too much money to get something that cooks with the same amount of hot spots as my cheap cast iron pan. I’m going to try to return it (there’s a 30-year warranty), and if I get the refund I will update to 5 stars. ... show more

This product line is fantastic. Warning, it is heavy but does it cook well, well yeah! The heavy bottom ensures that the heat distribution is even and after using it, I have to say it is very even across the whole bottom of the pan.
