  • Good for mascarpone cheese
I used to strain mascarpone on cheese cloth & strainer. This works as well, I didn’t use the insert & spring. It did take longer to strain here than the old fashioned way, so take that into account when using this for mascarpone cheese.

I make homemade yogurt in an instapot, using one gallon of milk at a time. This can hold half of the finished product for straining. If I strain the entire gallon, I end up with about 1/2 gallon of whey (which I've used in soups etc). If I use the spring, the yogurt is actually spreadable! Very easy to use. I always want to like yogurt (plain and Greek) but I can never get on board with the texture. I saw this in a Honeyjubu video and decided to give it a try, and now I'm having the best yogurt of my life! It's creamy and luxurious. I enjoy it with homemade granola and fresh cut fruit drizzled with honey, atop a green salad, or topped with olive oil and zaatar and eaten with pita bread. I'm sure there are many more possibilities. I happened to get it at a large discount.   • Works very well, latches are tricky
I've used this for a few months to drain whey from my homemade yogurt. I find it does an excellent job. I don't use the included spring. It places too much pressure on my yogurt. I do place a couple of small saucers on top of the pressure plate. That seems to be about right for my needs. Getting all 4 latches to catch is tricky. Sometimes, I have to be satisfied with just 2. Being very fortunate to get a weekly supply of fresh, grass-fed milk from a nearby farmer, I make yogurt, kefir and Icelandic Skyr at home. I prefer them when they are the consistency of Greek yogurt or cream cheese, but because hanging them to drain from a cloth bag makes for hassle and a mess, I haven’t been enjoying these healthy, probiotic rich foods as often as I would like to. Purchasing this product was all about changing that! While numerous products are good at draining whey, few provide the option to then press it to a thicker/drier consistency. It did a beautiful job with kefir and now I’m making a batch of Icelandic Skyr, which due to the milder taste (and therefore greater versatility in recipes) is my favorite. Available on Amazon, the company “Cultures for Health” makes a starter culture for making Skyr, which like kefir, cultures on the countertop at room temperature. The product is simple, easy to use and clean and will pay for itself in just a couple of weeks, vs. buying prepackaged fermented dairy products. Revised 7/2/24, changed from 5 to 3 stars: The only reason that I could see for the higher price on this product, over that of its nearly identical competitors is the silicone gasketing around the pressure plate and lid. This was for me the greatest differentiating selling point, as the point of the gasket on the plate is to prevent flowback from the strainer. However, even with the gasket, there is a gap through which the yogurt will ooze up from the strainer and into the top of the pressure plate even after a 14 hr. first drain (see photos). While this wasn't a big issue with draining kefir, for some reason it is a bigger problem with the Skyr. Also, while I had hoped that the tabs which latch the top of the unit to the bowl would soften up with use, they remain so stiff that they won’t latch evenly, and the lid won't seal well to the top of the unit. Because of these issues and considering the price paid, I revised my rating from 5 to 3 and will return the item. ... show more
