I use this for most of my home-made pizzas. It delivers a very crisp crust. The outer crust comes out light and airy with a bread like texture. In a thicker pizza style, like a Detroit Pizza, the crust has that nice crustiness combined with a light and soft interior. I bought this flour to use to provide a crisp crust on fried dishes (chicken, pork, shrimp, oysters) and to provide an absorbing base to retain sauces (BBQ, Buffalo, etc) in grilling and air fry dishes.
