Bob's Red Mill produces a high quality product and this coconut flour is another example of that. It is finely ground, clean white flour, and has a nice coconut aroma. It's great for baking all my keto and paleo recipes. This 4-pack purchase is a great value and the expiration date is 10 months away, so these will last in the pantry and I'll be able to use it without worrying about it going bad too soon. This is such a great deal! This pack of 4 is less than 2 at the store. I've started using coconut flour A LOT while doing a low carb diet. I have a nut allergy (mild side) and thought I. could handle using almond flour while baking--I had a bad reaction. Coconut flour to the rescue! Coconut flour is a lot more absorbent than any other flour so you tend to use a lot more. I absolutely love cooking with it. Yes, some things do take on a coconut taste, but that's ok. I used it for Swiss rolled cake, coconut pound cake, the powder is great for substituting wheat flour! And it came with separate air tight packages so you don’t have to worry about going bad without being able to use all of it at a short period of time. Bob's Red Mill is my go to for many gluten free flours, and I definitely find their coconut flour superior to any other brand I've tried. Coconut flour is tricky because it absorbs so much water, and brand to brand it can vary wildly how it behaves in baked goods. Bob's has been very consistent with excellent results. I always use Bob's so that my baked goods come out reliably, and I don't have to mess around with how much to use.
