  • A better smoked chicken
I thought I had the perfect smoked chicken in my charcoal smoker. When done to the proper temperature, the breast would be moist and a dark smoky bark would form. But I experimented with the Anova cooker. All of the whole chicken sous vide recipes called for spatchcock, but I kept my chicken whole in the zip lock bag for 3 hours at 150 F. Then into the charcoal smoker for about 1 1/2 hours until a nice dark brown formed. The big difference is that the moisture does lock into the bird. Even the wings were still moist, and the breast was moist and fork tender. Also, the seasoning was more even throughout the meat. It's different from 4 hours in the smoker without sous vide. Is sous vide smoked chicken better? I would say yes for most people. If you like a strong smoky bark, then straight smoker is probably better for you. But if you want a mild smoke flavor, tender, moist and evenly seasoned, then sous vide is better. And the Anova is super easy to use and does the job well. ... show more

  • Good temperature control
I have used this a few times, and the results have been good. Meat cooked this way is very tender and juicy. The only issue I have seen is that my iPhone can see this device, but the app refuses to connect to it. This is not really a problem because the control panel on the device is easy to operate, and all you are setting is temperature and time. Honestly, I see no reason this device should need an app at all. Would buy again. ... show more

  • Great product
I finally broke down and ordered this sous vide cooker about a month ago. I'm glad I finally took the plunge. I have already cooked 4 beef roasts (tritip and chuck, 137.5 degrees for 30 hours) and chicken thighs twice (145 degrees for 3 hours). Everything turned out great. I ordered the reusable silicon sous vide bags off Amazon, because one of the things that had kept me away from sous vide was the whole cooking in plastic thing (health concerns). Temperature control is excellent, generally within 1 degree of target. The Anova is not noisy but makes a bit of a whiny sound. Bluetooth is so-so, because range is very limited, but it's not really needed at all. The app is a great source of recipes and cooking time suggestions, however, so do load it on your phone. The immersion cooker is very straightforward and easy to use. I didn't even the read the instructions. I use a large Calphalon stock pot as the container for water. If you buy one, I recommend ordering the silicon bags, magnets for holding bags in place, and a silicon cover if you are using a deep stock pot to hold the water (see pic).   • Precision and simplicity is unmatched...
Never thought I'd be using a device like this - I prefer my BBQ grill for cooking just about everything, including my mixed drinks... After learning the art of reverse searing my steaks, I heard people talk about this Sous Vide method of cooking and then searing to finish. Alright, I'm up for something new. Packaging reminds me of something Apple would do - elegant and well designed packaging, yet simplistic. Beyond the packaging, out of the box, I downloaded the app to control the device - pairing was nearly instant - took less than a second to find and pair - it sends a, presumably, random temperature reading to the device for you to verify on your phone to insure proper pairing. First up, some eggs - enjoy a nice hard boiled egg for lunch - or breakfast or anytime for that matter. I was offered a range of cooking options - the app does an amazing job of telling you the pros/cons of each setting, allowing you to quickly determine the finished result you wanted - in my case, I stayed generic at 160 degrees for the eggs - once you choose to start the routine, it immediately starts the device and heating the water - reporting in near real-time the temperature of the water - once reached, stage 2, add the eggs and it continues a precise timer countdown to completion. Also - if your water level is low - it detects and warns you to add water (or remove if too much). This evening will be the steaks - but for now, I am still enjoying amazingly perfect hard boiled eggs without having to stand over the stove for a minute. This device is a bargain for the quality and results you get - highly recommend - anyone, chef or not, can use it successfully! ... show more

  • Mostly works
I've been using this unit for 6 months. I cook with it once or twice a week. I bought it to replace a slightly less expensive unit of an off brand. The unit it replaced was starting to make noise enough to make me believe the circulator was at risk of failing. This unit has worked well, EXCEPT! For two issues. 1. Out of the box it was noisier than the off brand. It has not gotten quieter. With a lot of other background noise, it can be overlooked. However if you sometimes sip coffee in your kitchen in the morning and enjoy a bit of quiet, this is something to be aware of. 2. I often cook large, tough, cheap cuts of meat for literally two days at a time. So when I say I use this device once or twice a week, sometimes it runs for nearly 3 full days out of seven, potentially more. Several times in the past month sometime towards the end of a 48 or 50 hour cook, the device display freezes up. When this happens the temperature also starts to drift. Slowly, but surely getting hotter in each case. This hasn't ruined a dinner yet, and possibly it can be circumvented by turning it off and on again. As it made it to within a couple hours of the target time, I've just unplugged it and called it close enough. 45 hours on a 48 hour cook? I can serve supper a little early and call it close enough. The volume of water keeps it hot long enough that it isn't an issue. I'm considering replacing it with something better, because otherwise it feels like I'll end up with a day of cooking in, and a ruined meal. ... show more
