If you want a quality knife this is it. Quality can mean $$$. We lost our paring knife from our set so I found the closest thing to our set. This knife is very sharp and an improvement to our original set. My wife loves it!

  • A must-have
Every time my darling daughter comes to visit, we end up needing to replace something, bless her! A few years ago we had to replace the dishwasher, simply because she insisted on doing the dishes and - well, I digress. Last visit, we thought it was safe to allow her to clear the table, but a few days after she flew home, we discovered our paring knife was nowhere to be found. NO where, I tell you. Must have gone into the trash with some spoons and ramekins. Oh, well. We take it in stride for the most part. But, not when it comes to my Wusthof knives. They are of such high quality and durability, not to mention beauty, I couldn’t bear to be without them. As soon as we ascertained what must have happened, I ordered a replacement. I’m eyeing it warmly as I write. Wusthov knives are a total joy to have and to use. Next visit, I’m thinking it should be safe to allow my beautiful daughter to straighten the rugs, yes? ... show more

  • Quite expensive for mediocre performance--ease of maintenance is best feature
Was looking for something in my past orders and noticed that I've had this knife for 10 years. So--hey--why not do a review? It's still in regular use in our kitchen, so that's certainly some sort of endorsement. That said, if I knew then what I know now about knives, I'd have bought something else. You can get a better paring knife for less money if you don't pay for the Wusthof name and marketing. Overall, I'd say the greatest virtue of this knife is nearly idiotproof maintenance (other than keeping it sharp, more on which below). The sculpted resin handle is very durable and comfortable, and X50CRMoV15 steel used in this blade (and most high-end kitchen knives from the big German brands) is EXTREMELY stain- and corrosion-resistant and very tough against chipping. Both handle and blade can happily survive soaking in a soapy sink for two days, being run through the dishwasher, and any of the other things that you really shouldn't be doing with a knife but that tend to happen in a busy family household. That said, the performance of the knife in, you know, cutting stuff is mediocre at best. The tradeoff for the corrosion-resistance and the resistance to chipping is that this steel is pretty soft, and therefore doesn't retain an edge well at all. More troubling is that, while poor edge retention usually means ease of sharpening, my experience in a decade of ownership has been that this knife really doesn't sharpen up all that well either--just doesn't easily take a very keen edge and has to be sharpened at much more obtuse angles than my Japanese knives in VG-10 steel. So, if you like to keep your knives sharp, the maintenance load for this knife is actually pretty high. I'd also add that, like most Wusthof knives I've owned in my time, which are "sharpened" primarily for shipment and display rather than for slicing ability, this thing was pretty dull out of the box way back when we got it. So, all in all, not a great knife, and it costs quite a lot for what you get. It's a good choice if you or the others in your household are unlikely to be terribly careful with it. Not the best choice for your money if you want good performance out of the blade. ... show more

  • German made items rule!
The knife is a perfect size for cutting anything from fruit and vegetables to meats and so forth....The edge on this knife is super, super sharp so be very careful with your fingers when handling this baby....Always clean the knife after use and dry it completely off and put it away in a knife block where it is not clanging with other pieces of silverware...Also DO NOT put this knife in a dishwasher always hand wash and like I stated completely dry it off when finished with it...Lastly when cutting with it you should use a cutting board from Japan being they use a wood that is soft and you will get many uses out of it before you have to sharpen it. ... show more

  • Best paring knife I've ever owned.
This is my second purchase of this paring knife. My first knife disappeared about a month and a half ago and I could not wait to replace it. This knife has become my most used kitchen tool next to my 8-inch chef knife, and it was a true struggle to prep meals without my trusted paring knife. We eat a lot of vegetarian meals and so a good knife is essential in cooking for me with fresh veggies and herbs. You will not be disappointed in your purchase...unless someone throws it out with the potato peelings...keep an eye on it. Truly a GREAT knife! ... show more
