  • This is your buy-it-for-life pan, the single best piece of cookware I'll ever own
This is the single greatest pan I have ever owned. Pros: - Nonstick has been bulletproof, I thought the 'diamond coated' business was all marketing, but this pan does not stick to anything - Weight of the pan is properly offset by the handle - I put this in the dishwasher all the time, and I see no signs of wear - The lid fits perfectly - It's got a little dial on the lid to adjust how much steam you want to let out - It's oven safe - It cooks *SO EVENLY*. No other piece of cookware I've ever used has been so even. Cons: - It is expensive, and the price looks to have gone up since I first bought it. This pan is just about perfect for me. It is my daily driver and probably gets more use than all the other pots and pans in my kitchen combined. I have cookware from All-Clad, from Le Creuset, from Cuisinart -- and while they all make very good products, nothing among them touches this pan. I think because the name 'Swiss Diamond' is not really a brand you think of when you think of good cookware (I'll be honest: I thought it was the Swiss Army knife company, Victorinox), they were able to design a pan that met needs rather than desires. You buy Le Creuset because it's good cookware; and because it is striking to look at, it imparts a classical French cuisine ethos to your cooking; in this way it meets both a need (good cookware) and a desire (design and historicity of the brand). This Swiss Diamond pan feels designed purpose-first; the attention to how the pan weight is distributed when held by the handle, or to how the lid sits on the pan and how much wiggleroom is needed so that it sits neatly without rattling. The coating on my old frying pam was starting to flake, so I needed a new one. I chose this pan as a replacement. I was not expecting to pay this amount for a single pan; however, it was on discount, so I took the leap. I love the pan. These pans are worth their price! They require low heat, clean up the easiest of any pan on the market, and last a long time. I have three pans and have bought additional ones to use as gifts. I started using these pans when the 8" skillet was sold for a nice low promotional price. I was browsing in a kitchen supply store for gifts and the sales clerks kept leading their customers to the Swiss Diamond pans; absolutely recommending them. I was intrigued by this and decided to give the pans a try. My first pan (several years of almost daily use) has some small marks on the bottom, but the performance has not been marred by this. I was really happy to see the company offer a fry pan with a lid. It works very well and I prefer to see how my food looks while it's cooking. I agree with the reviewers who stated that they would prefer a higher side to the pan - because it is somewhat shallow and it doesn't fit as much food as my other 10" fry pans. But, the benefits more than compensate for that and if I need a deeper pan, I use something else. ... show more

I tried the wok from this company (using on a gas burner), and found that the nonstick from Swiss Diamond was really effective and while for wok cooking not like my regular carbon steel wok it was still excellent in its own way. I decided to give this pan a shot. On the electric burner it works incredibly well. It has a huge contact plate on the bottom (non stick) which sucks the heat out of the coils of the electric stove incredibly efficiently. It heats up quickly and after optimizing temperatures and times for this pan, I now get really fabulous results which rival the meals I am used to from the carbon steel wok. 5 Stars for Pan-Hay! It took a little time to get things optimized for my cooktop (an old junker electric coil range), but once I got things worked out, the results are excellent. Clean up is trivial. Cooked food quality is excellent. p.s. The lid with the little knob that lets you seal it up or let steam out works like a charm - it can be set to keep all the moisture in at first, then with an easy turn, you can let the steam leak enough to keep your meal from going to soup (if you have tons of vegetables as I always do). ... show more

The pan arrived in a factory box. I've been using this pan almost every day for various recipes (mainly eggs, sauces, meats) for the past couple of months. During that time frame I've only hand washed the pan after it has completely cooled down after every use using Dawn and a soft bristle brush. The mess washes out very easily and hasn't left stains or burn marks. The food doesn't stick and cooks fairly evenly. However, the pan has developed a couple of superficial surface scratches on it (I have only used plastic spatulas and no metal utensils whatsoever) but hasn't affected the non-stick capabilities of the pan. Overall, this is a well constructed non-stick pan that is easy to cook with and clean. I would recommend this pan. I will also update this review if the non-stick coating wears off and/or the pan develops any issues with functionality, durability or quality. ... show more

  • Excellent, if you take good care of it
Don't use metal utensils, and don't put it in the dishwasher -- if you do these two things, your pan will remain like new for a very long time. The thick metal heats up rather slowly but holds very even heat. I find that once the pan has heated up, I can brown meat on medium heat. I like to nest my frying pans so I put a paper towel in between to keep this one from getting marred. ... show more
