The Premier chef's Knife is constructed with Shun's proprietary VG-Max cutting core with 68 layers of stainless Damascus cladding for a strong, corrosion-resistant, stain-resistant, razor sharp 16-degree edge. The hammered TSUCHIME finish is beautiful and helps release food easily when cutting. I've owned one of these before, years ago. It was either stolen, or lost in a move. Either way, I am starting a new Chef job soon, so I immediately purchased another one. I used it every day at my old job. It's a workhorse. The 16° edge is razor sharp & cuts through pretty much anything effortlessly. Veggies, Meats, herbs, fruit. Etc. This thing is literally a tiny samurai sword. My knife is beautifully balanced, and very easy to index where the tip is. The handle is pretty comfortable. It has a swell in it so it feels good and secure in my hand. My only criticism of the knife is the handle is a little long. While holding it correctly in a "Pinch-Grip" fashion, there is quite a bit of wood remaining below my hand. ... show more

I hesitated buying a Shun knife even though I had heard wonderful things from professional chefs about them. Let's face it, they are expensive. Well, if you love to cook and need ONE knife that outperforms everything you have in your kitchen, BUY this one! I love it - it's very very sharp so I bought a pair of Kevlar gloves to use with it; it's lightweight, very lightweight, so your cuts and chops are easier with less wrist and hand strain; it's a work of art, beautiful Damascus steel and the handle is comfortable too. I have many Wusthof and Henckel knives and while I love them, they are heavy, hard to sharpen and have thicker blades than the Shun. I couldn't be happier and look forward to buying a parer and 6" Chefs knife in the future from Shun! ... show more

An elegant looking knife that is extremely sharp. Wish I bought Shun knives a long time ago. They are a good investment for your kitchen. Forget all the goofy gadgets and invest in good Japanese knives.

Very well balanced... For the price, this is a great knife. I sent back the Myiabi Mizu for poor craftsmanship, the blade was bent and then the Yoshihiro Gyuto that was horribly balanced ( not at all) with a handle that was supposed to be wood and felt like plastic, that was also $200... As a Chef who uses this daily. This is a $200 knife, thats cheap to be honest, people have this impression that is a lot of money for a knife. A good Japanese hand forged knife goes far beyond $800/$1000. This is a quality knife for the price. If i had was buying this myself, I would not be purchasing through Amazon, my work paid for this, so your options are very limited in what Amazon carries. ... show more

The shun knife has good balance, cuts vegetables and meat very well overall performance was above and beyond the other five knives, and they were all top name brands. Nothing but praise for the knife. Sharp as a razor, beautiful, elegant. But nothing to store the knife...I was at least expecting a sturdy cardboard box with a knife shape insert....but nope, I got a cardboard box that walmart would be ashamed of with a cardboard sleeve on the blade. How am I supposed to store this thing? Upfront, i'm just a home chef....maybe pros have places to store their tools without damage...but I dont. Very dissapointed in this.
