  • A solid pan with a few downfalls

This is my second Always Pan - my first was the nonstick version, which I loved but was frustrated I couldn't use to go from stovetop to oven. This definitely alleviates that problem! Overall, it's a beautiful looking pan, which is important if you don't have a lot of space (I don't) and have to keep it on the stove. It cooks very evenly. I only have two issues with it. One - it can be difficult to clean. Our Place claims it will eventually gather a 'patina,' but on mine, it looks less like an overall patina and more like a quarter of the pan has scorched stains I can't scrub off. Two - it is HEAVY. If you're like me and have somewhat weak arms, it can be a struggle to do things like scrape cooked food out of the pan or clean it with one hand. This is a more general problem with cast iron, but I find I have a harder time with this pan than I do with even my 12" Lodge cast iron. Despite that, I do recommend it. I'm really enjoying this pan as it is really versatile. It's not so large that it takes up the whole stovetop, but it is big enough to handle most any job for one to two people. I've cooked meats, made sauces, boiled pasta, seared steaks... you name it! The surface is decently nonstick, not so much as a dedicated nonstick pan, but with proper heat management and using oils it's worked really well. Heat distribution seems pretty even as I have not noticed any hot spots, although due to the mass of the pan it can take a while to warm up, but it also retains heat well. I am a stickler for cleaning pans manually instead of using the dishwasher, and I'm happy with how easy it is to clean. I haven't had issues with foods getting stubbornly stuck to it. ... show more

  • ECCENTRIC, BUT A VERSATILE WORKHORSE THAT ALSO HAPPENS TO BE GORGEOUS

They had me at “balanced knob for two-way standing.” I’ve been looking for this lid all my life — a lid that, when I take off the skillet and it’s dirty, I can lay it upside down on my counter, without dirtying my counter. Thank you. This skillet arrived beautifully packaged, and I know when items arrive in great packaging, they’re going to be great items. This “cast iron” skillet is no different, with a couple of odd design features that’ll mention below. The skillet is smaller than most, which makes it a good size for two people (I just made chicken parmigiana for myself and my husband). You don’t have to season this cast iron, which I love, since I’ve grown bored of seasoning pans. The pan comes with a very good quality silicone grip for the handle, and another silicone “hot grip” for the short handle of the pan — which brings me to the first of the odd design features of this pan: the “hot grip” is too small; I’m never going to use it; I’m going to use a regular pot holder. If the “hot grip” fit permanently on the short handle, I’d love it (Berndes makes “hot grips” for their pans that are meant to be permanent). The second oddity of this pan is the cutout in the lid. It’s meant to fit the tip of the wooden spatula. There’s also a hole in the spatula that fits over a bump in the handle of the pan. My question is why? Why would I want my wooden spatula to be a third of the way inside the pan? And if I decide it’s a good idea to have the spatula leaning into the pan, then I can’t leave the silicone grip on the handle of the pan (please see photo). It feels as if two different engineers worked on this skillet, and there was never a meeting of the minds as to what to do about the handle. Or, somehow they felt that you’d leave the spatula in the pan while cooking, then take it out of the pan, then put on the silicone grips, then move your pan…. It’s too many steps. I’m leaving the silicone grip on the handle for good, and I’m resting my spatula on a spoon rest. (Btw, I think the spatula would get burn marks from lying on the edge of the hot skillet.) Lastly, the cutout in the lid will aim burning steam right at your hand if you put the cutout over the handle of the pan. I will do no such thing. In any case, I still love this cast iron pan and I’m not going to duck it a star for a couple of eccentricities. The pan is gorgeous; it heats beautifully; it cleans easily; and the accompanying beechwood spatula is awesome. Beechwood is hard to come by. [I want the tagine top for this pan. Where can I get it?
