For the price I was expecting to buy what would be the "generational" set... have these knives long enough to pass down type of kitchenware. Kinda like the older pyrex dishes I got from my grandparents. Im extremely happy with my purchase. The Oliv series set is so light weight its nuts and talk about sharp! I tested each and every knife and they shave hair. I went to trim chicken and didnt notice the most rear part of the knife got close and poked my finger...havent cut myselve in years. Information I read says higher quality knives hold their sharpness and just need honing every other use or so...also never in a dish washer or let set in water....happy to say unless they disappear these are gonna be the last set I buy. ... show more

  • Wow... but $800.00?
What a beautiful set of knives! This is a hard review to write, only because it comes down to value and expectations. This is NOT a cheap set of knives! holy cow, they are pricey. With that price tag, you are going to, and should, expect a lot. For the most part, these do in fact meet that expectation. But keep some things in mind..... When you really stop and think about the price, it's not that bad and in fact kind of cheap. As I started to do the math I realized that I actually have more expensive knives. I have a couple of $200+ cleavers and chef knives that are truly a work of art. When you consider that a block full of $250 knives can quickly get over a $1000.00, this set seems more economical than first realized. If I were to compare this chef knife to my hand made Japanese chef knife, I probably would consider them very close in price, with the latter inching out in front, but just barely. This would be due to the overall look and fit and finish of the Japanese version. You can just tell by how it looks and feels that it is an exquisite piece of art. If I were to fill my knife block with those however, we would be talking over $4000.00. This makes these a steal! They are sharp! They also hold a great edge. Keep in mind that the most expensive knives don't get sharpened, they get honed. There is a difference and it means something. Cheap knives need sharpened even if they hold a great edge. These knives, like my more expensive counterparts, need honed almost every time you use it. This is not difficult and with the provided honing rod, it's really easy. I have been using these for a month now and find myself leaving the really expensive knife in its box, simply because these are so conveniently placed on my counter top. I will only pull out the really nice one if I am carving at the table with guests or need a specialty cleaver or what have you. Construction is fantastic, the handles are beautiful and the scissors are a welcome addition to the kitchen. This is a great set to pass on to your children if you take care of them. As a note, mine never get submerged when cleaned or ever put in the dishwasher! They are immediately wiped clean and dried and put away. The handles are real wood and if you do submerge (I wouldn't recommend) them, be sure to maintain them by treating the wood with a vegetable oil. Love the provided steak knives too! It really is something when your guests come over for a good steak and you put one of these knives in front of them! They are a sight to behold and crazy scary sharp. Highly recommend if you want a really good set of knives without completely breaking the bank. In the end, you can spend a heck of a lot more, but all you really get is bragging rights. These will do 99% of what the pricey ones will, you just won't be able to say you spent 5k! ... show more

I thought i was gonna love these knives but once i held them, didn’t like how they felt. I like my knives to have a little weight to them, to me they are not worth the price. I do like the butcher block and i think that is what you are really paying for, now that is heavy and well made and looked nice in my kitchen, but I ended up giving them to my sis. The media could not be loaded. These are so sharp we already had two oops moments and some blood was shed. These knives are incredible, very sharp and easy to cut any food. One thing I noticed was the handles to the knives fading after being washed. I didn’t wash the handles but water inevitably got on them and made them look “dried out” it lost its shine.very disappointed by this. This is why it lost 2 stars. At this price point, the handles should not fade after getting some water and being dried immediately. Aside from that, these are fantastic knives for cutting ... show more

This knife set is amazing! My old one is trash compared to this. I’m way more careful handling them because they’re very sharp. I did the paper test just for kicks and omg, it was like a warning to not play. I tested an older knife that I thought was sharp AF but it didn’t cut as easily as the Cangshan. I was surprised that the steak knives weren’t serrated but only because that’s not what I’m used to. I’m in love with the maple wood handles; the block looks good as well - makes my kitchen look classy & fab. I can’t think of anything that I dislike about this set. Oh, maybe the price! …but then again, you get what you pay for and you’re truly paying for quality (it really does reflect it). I obtained this through the vine program for “free” but not really, as I’m still paying taxes on it. After using & taking notes on its performance, I honestly would still buy it for $800. I’m always willing to spend more on things that I know I will use & will last + prefer it to buying cheap and having to replace often. I was close to ordering Henckels only because I saw that my favorite chef uses that brand but so freaking glad I was offered this one. If you decide on this one, just be careful at all x. Like I said, they are truly very sharp. It was packed very well but just take your time when unpacking to avoid getting hurt. 5-stars all the way! ... show more

  • Swedish Steel
This brand produces knives in Swedish, German, Japanese steel and this particular set is Swedish steel. They are ultra sharp and stay sharp. You shouldn’t have to sharpen these knives for about 9-12 months even with daily use. The knives are produced in a factory in China which is the only pitfall I can think of so far, we love using these knives as they are definitely high quality. It is not recommended to put these in the dishwasher and with all stainless steel knives, you want to avoid letting them sit in water for long due to rusting. I hand wash these and let air dry and will continue doing so to help keep them nice for a long time. Very high caliber product that should last a long time if taken care of.
