These are sharper and has stayed sharper than the J.A. Henckels set I had. It's really easy to get those every thin julienne slices with the small knives. These do weigh a bit more than the J.A. Henckels', but it's an issue for me. It would be an issue if I was using them like a sous chef would---continuously for hours at a time. I do hope they last longer than the J.A. I have an existing quality knife set from Henckels (the 2 people, higher end version) but have always wanted to get a set of these nice looking Cangshans. I finally got them on sale and am blown away. The quality is great. They're very sharp, and the set is a absolutely beautiful. So much that I made a few collages to show off to my sister. Amazon buyers can see them too. :) I did a video review of this set and compared some of the knives to my Miyabi, Henckel, and Wusthof knives on YouTube.
