  • Very Good Hobby-Grade Knife Set For A Home Kitchen

I'm saying home kitchen, because they're too fancy for restaurant work. Note of Definition: Nowadays, the two most common forms of knives are German & Japanese. Knives will be defined by these two names, regardless of where they were manufactured. Japanese will make German style, and German will make Japanese style... and everyone in between does the same. Japanese: Being used less & less. The steel is very hard, thus "can have" a razor sharp edge. But being very hard steel, they are brittle, and can break more easily. Also, sharpening a Japanese knife is more difficult to do than a German. Japanese styled knives are also only bevel sharpened on one side. Thus, there are knives for lefthand or righthand, never for both. German Knives are more what you'd call workhorses. While not as sharp as if from Japanese steel, 99% of chefs will never need that additional sharpness. That level of razor sharpness is only needed on a Yanagiba knife. (Used to get that Sashimi paper-thin cut.) German knives are far more forgiving than Japanese. And, easier to keep sharp. (Just dull quicker.) German knives are also bevel sharpened on both sides. Thus, anyone can use them, lefthanded or righthanded, doesn't matter. A bit of reading, and I see that these knives are made of German X50CrMoV15 steel. Such has a 56 HRC. 56 to 58 HRC is what you'll find used on "German" professional knives, and 58 to 60 HRC on "Japanese". Thus, 56 HRC puts these knives on the lower HRC for German professional knives. And, for home and some restaurants, 56 HRC means a more forgiving knife, thus the better one. Therefore, I'm being very critical, but still liking what I'm seeing... for its intended purpose. Yes, they have been machine sharpened, not by hand & whetstone. But, they are very sharp, and if you want to take them up a level in sharpness, using a whetstone, the results will be there. But if you want to only use one of those modern sharpening machines, a little care, and they'll stay sharp for a lifetime. Now to price: I ordered the 23 piece set, which is basically $500. That sounds at first like a lot, but that equates out to $21.74 per knife. Granted those steak knives don't sell individually for that much, but just to make a comparison; a (German) Kramer steak knife sells for between $200 and $250 a piece. (Good knives, of quality steel, can get very pricy, very quickly.) And if you look at what that 23 piece set includes, it's only missing a Yanagiba knife, a bone shears, and a brisket knife... both of the knives being specialized knives, that not everyone needs, or can use enough to buy one. So in a nutshell, that set includes everything a hobby-grade cook will need in a home kitchen, except the bone shears. (The provided kitchen scissors can do the job on chicken or duck, not so much on turkey or goose.) Why this set can be sold at this price is because of where it comes from. If you buy the very same knife set made in Japan or Germany, you're going to pay twice as much, for the same quality. You're paying for the reputation those two countries have as knife makers. Therefore my critical conclusion has to be, if you have this amount in your budget, you're going to get value for money. And also, a knife set that can last a lifetime. ... show more

I have bought other products from this company in the past and they have always been great. These are no different and are highly recommended! Very sharp and nice looking knives and easy to take care of. This kit comes with quite a lot for the price point.

  • Couple of key flaws ruin and otherwise good knife set

Often i wonder "did designers really design a thoughtful product?" They rarely do. They pick a few saleable features and focus on those. The shape of the heel on these knifes is terrible. It is a very sharp and angle that you might notice in simple use but as soon as you need to put pressure on the heel to push the knife through a couple of frozen steaks to separate them....you will see." The heel/end should be flat or rounded so you can put real pressue on it. You cannot with design. This will be a bit deal in real use. Also the build is great but the balance is poor. The handle is so heavy that it will tend to slide through your hand from the handle end meaning the blade will fall through your hand. If they were somewhat balanced, the risk of this would be low. These are so poorly balanced you must be constantly on your guard. Summary: It would take only a few hours for a knowledgeable kitchen knife smith to design a great knife. It would have only take a few reviewers or testers an hour to two to identify the issues with the design. ... show more

  • Know what you’re buying.

Ignore the review that calls these cheap Chinese crap. That person did not research what they bought. I generally use Miyabi or Enso. This first photo shows 4 knives- two Wüsthofs, a Yaxell and a Cangshan. I included the other pic to show I do have a frame of reference. I can’t say the Cangshan is sharper than the Yaxell but I’d reach for it over the Wüsthofs any day. It’s kept its edge longer and is far more durable than the other German steel. I bought this set for my GF’s daughter who wanted sharp knives. And while they aren’t the Lamborghini of knives- they are solid. They are sharp, durable and will slice you deeply if you’re not careful. This is a great set for those who need knives that will slice, but maybe who also won’t appreciate or properly care for a set of custom Japanese steel blades.   • A worthy addition to a mid to high end kitchen

This isn’t an inexpensive set of knives, but after quite a few years of using a small set of hand me down German knives, we decided to get a full set. We love our old knives and seeing that these knives use German steel as well, we took the plunge. I was looking at the other Cangshan lines, and saw good reviews for straight handle, vs the handle like our old knives with the curve at the end. Indeed, it turns out that the design took into account good ergonomic design principles, and still kept a good balanced design. One of the first items I test is how well the knife feels in my hand, is it balanced, can I feel it is an extension of my hand, or do I have to pay attention how to hold it? In my test, not only did it pass the paper test (I do it for fun only), and the soft tomato (real test), but it felt natural in my hand. It is a bit heavier than our inherited/old knives, but those were chosen from a very lightweight line. The 22 pieces (honing, scissors, knives) are not light at around 10 lbs. Thus, it was nice to get a block made of Acacia wood, sturdy, beautiful looking, which weighs about 8 lbs. Make sure you have the space on your counter. And be prepared to get compliments as well. I like the Asian style of 16 degrees, for us it is super helpful. Of course, it is a pleasure to get the knives well sharpened and passing the tests, but truthfully if one intends to use it, and not just display, you have to keep on sharpening the ones you use quite often.
