I will address the packing oil question first- it’s to keep the blades from getting any surface corrosion/rust while they are sitting before shipping- just wash it off before use. These knives are sharp and heavy! I cook a lot and they have held up well. I have cut on a variety of surfaces and I definitely would recommend buying if you’re thinking about it. I have cut directly on my cast iron top, wood cutting boards, pizza stone, and concrete outdoor countertops. With all that said the edges have remained intact and sharp. **Disclaimer** I do NOT recommend cutting on hardened surfaces I.E. stone/concrete/cast iron. I’m just give honest use of the knives, as they live in a big outdoor kitchen and are used a lot. Care- just washed and dried after each use and I wipe them with good quality olive oil, OR I spray them with PAM cooking spray. As for being sharp, be careful and keep away from kids and inexperienced people- definitely not a toy as they are sharp. The heft makes it easy to cut. Overall a good knife set that is very inexpensive- have ordered 2 more sets as gifts. Hope the review helped ... show more

The knives are good for the budget. They came in sharp and the edges were pretty good. No defects found upon my initial inspection. The handles were well made as well, but the rivets could be more flushed with the wood. They are full tang, always required for any knife in my opinion. They sliced through a hog like butter. Only downside is I would like for the bone chopping knife to come with a higher angle on the edge for durability, but that is an easy fix. Again, for the money, this set of knives is a good deal. I'm happy with this purchase, as I know I can make these knives last a long time. Do not run these through cheap sharpeners as it can ruin the edge. Use either whetstones, or a good diamond sharpening system for longevity. ... show more

I cook at home literally every day, and I've settled on these as the best daily set of knives I've owned to date. I put away the Henckels completely. I barely use my Global set now. The Nakiri blade is the one I use most for chopping/dicing. The boning knife has been good for many tasks, including chopping but the sharp point works great for removing seeds and ribs from peppers. The chef knife (aka - the meat cleaver) doesn't get as much use as it should, because it's great! I need a bit more practice to get used to it. Three months in and they are as sharp as the day I took them out of the box. If they don't hold up after a year I'll come back here and update, but so far I'm very impressed. ... show more

I love this set. Saw it on an ad and just had to have it. Waited 2 years to get them, bit well worth the wait (too busy to order). I got them and let me tell you THEY SLICE LIKE BUTTER!!!!! I'll never sharpen them with a regular sharpener. These knives deserve professional sharpening. Only,and truly the ONLY, down side is they are a bit heavy.
