I have been looking for a pan like this for years. The perfect balance between steel and non stick. The pan is coated steel. Like steel- you heat it up, then add oil, then the food. You Can't Skip Those Steps! Works perfectly for eggs. Doesn't even stick if you forget to wash the pan overnight. Meat: Like any metal pan- lay the meat down in the hot pan, the meat will instantly stick. Don't try to pry it loose, let it cook until the bottom browns just a bit and the meat releases. Flip it and repeat. As always, leave thick pieces of meat out to reach room temp so the center will cook. Let the steel pan cool naturaly or the enamel will crack. Remember don't put food in a cold steel pan. Heat. Oil. Add food. ... show more

    • This is a Great Pan for Small Cooking
This is a great pan for small cooking on top of the range or in the oven. I love that it is nonstick ceramic and it has a great solid weight. There are minimum steps that you have to do before using the pan for the first time. I will be using this pan in my toaster oven to heat and cook food. I love that the handle is detachable so without the handle it is easy to place in my convection oven. You can use this pan up to 450 degrees in an oven (although I won't be going that high). Prep for this pan instructions require boiling water, then coating w/oil, then 12 hrs. Wait b/f use, then add oil b/f cooking again. Nonstick?...I have to wait to use b/f I can find out but it may be worth the toxic free materials I was hoping for. It’s pretty as the other reviews mention. I purchased the “green” color. The handle heat indicator does work to show the pan is hot w/a color change from red to gray. Nice handle easily screwed on. Explanation for the prepping of pan would be useful. Why the steps...how does it help or cure the pan? ... show more

I followed the initial instructions to "prep" the pan and it was very nice for about a month! For context, I use it daily and follow all instructions (never heat past medium, wash after cool-off, etc.) the nonstick has worn off so much that not even a scrambled egg will cook nicely, unless you use a gallon of oil... such a shame because the pan is so cute & I love the temperature indicator. But the nonstick is practically gone & the inner center of the pan is easily stained :-( ... show more
