This is my third Shun knife (1st - santoku with black wood handle, 2nd - paring with light wood handle) and it is a joy to use. The blade effortlessly slices through onions, as if they were soft butter, and the balance and light weight of the knife is perfect for slicing. This sandwich knife is better suited than a chefs knife to many of the daily tasks in my kitchen, and it is now my most reached for knife. The anesthetics of the knife are exquisite - it's my first knife with beaten metal (to reduce friction while slicing) - and I wasn't sure from the pictures if I would like it. However, in person, it is absolutely gorgeous and everyone oohs over it. Can you get a cheaper knife with similar metal quality? Probably yes, but definitely not one that looks and moves like a work of art - and this knife is a work of art. For a high performance tool that will last my lifetime, I'm quite satisfied and would recommend this knife - the utility and beauty are worth it. ... show more

A knife is personal. This is my first Japanese knife. I am only used to Western style. I was eager to try one and after much debate went with the Shun for looks, as well as general reputation and price point. So far I really like it. I have tried and own a Santoku, but I really prefer the gyoto or chef knife. This is a great utility knife for when the chef knife is just too big. Very nimble. Great with the mushrooms yesterday. This knife is stunningly beautiful with the damascus steel and is very sharp. I am taking it to the stone soon. So far I really love it. I am impressed. It is very easy to work with. Holy mother of God is this thing sharp. Sliced an onion like it wasn't even there. I usually prefer a little more heft, but as light as this thing is, I really enjoy using it. I have 3 Shun knives to complement my Wustoff collection. These are much sharper and lighter so generally my go-to everyday knives - but - they are hard to resharpen to the original edge and easy to damage (do not drop!). I still use my Wustoff knives for jobs like splitting an acorn squash.Very pricey but worth it if you cook every day like I do. Even simple tasks like peeling potatoes go easier with a really sharp knife. ... show more

OMG amazing. First of all...beautiful. The handle, the blade, it's a work of art. Then, it is SOOOO sharp, be careful! I just cannot believe how easily it cuts anything I've wanted to cut. Someone told me, use German steel for tough jobs, like breaking down a chicken or whatever, and use Japanese steel for precision cutting, like cubing meat, dicing veggies, mincing herbs...so that is my approach. I can get a really fine dice with this knife, and it is so easy. Very happy! ... show more

Never before did I have such an expensive knife. For the moment I am amazed how sharp and beautiful it is but the tip already broke just by leaving the knife with the other knives in the drawer. I was so excited to purchase a very good kitchen knife and believed this must be an excellent product. It is definitely one of the sharpest knives I have ever had but it is also the only knife I’ve ever had that quickly developed a chip in the middle of the blade.   • Amazing knife built to last!

I love this knife so much. As a teppanyaki (hibachi) chef, I use this knife constantly, on a steel surface. It maintains an edge better than any knife I've dealt with. It's used to slice veggies, fish, and meats all on the grill, so it sees quite a lot of use and abuse. This knife and I have been through some tough times, too. As one of the more pricey knives I own, I was devastated when I dropped it from hip-level on to tile, right on the point. It cracked and bent slightly, but after some love and some dedication with sharpening, I was able to get it back to like-new. Because of this I become very defensive when another chef or kitchen member tries to touch or use this knife. Nobody is allowed near it without constant, direct supervision. I simply can't express how much I love this knife and would definitely buy another if this one fails. However, with 18 months of daily use on a steel surface and being run on a honing steel several times a day, I've noticed no real deterioration of the edge.
