  • Very sharp and very well-made

As an owner of several Shan Zu knives I was eager to compare this to the ones I have. This appears to be the Okinawa line for Shan Zu, but I am perplexed that the Shan Zu site on Amazon and Shan Zu site on the web do not list this series, so I am not sure if it part of a set, a standalone knife, or a discontinued model. Also, it lists Japanese G5 - 10Cr15Mov steel and I was likewise unable to find anything on this steel - I am familiar with the Chinese equivalent to Japanese VG-10 steel, which is 10CrCoMoV, but I did not find that on Shan Zu's website either. So in terms of sharing my opinion on the steel I am unable to do so. Regarding the knife itself, the ergonomics are terrific with the Pakkawood handle filling the hand nicely - there are no obvious handle pins or rivets so I believe the handle is secured by a screw on end cap. The juncture of the handle and bolster are smooth with no rough edges and the blade itself is rather handsome - no obvious Damascus patterns, but there is one spot where you can see the outer layers over the inner core - this is not a defect a reflection of the manner of manufacture. It is breathtakingly sharp due to the acute edge angle of 12 degrees and it feels like the steel is high quality - if you're somewhat experience with cutlery you can get an inclination of steel quality by the keenness of the edge and this edge is terrific. Overall, I feel this is a winner in the kitchen if you need to add a chef sized knife and aren't necessarily looking for a set. ... show more

  • Absolutely the sharpest knife I own. Period. Nothing else to discuss.

This is the sharpest knife I have ever owned, by far! I have seen so many videos and ads of people with knives that will cut paper with little-to-no effort and act like scissors across a sheet of computer paper. I thought it was just a one-time thing and smoke and mirrors. Nope! This knife is absolutely it. You can nearly make confetti with this thing with one hand on the paper and one hand on the knife! But, cutting paper isn't what this is meant for and I put it to the test across chicken, pork, steak, veggies (thin slice tomato anyone?) and it was amazing. The weight and size are beautifully engineered and make the knife super easy to use. When it comes to knives, there are a number of phrases that come to mind. One is that you get what you pay for ... and that is definitely worth it here, and the other phrase is that the most dangerous knife in your home is a dull knife. Absolute truth! The confidence and single-cut nature of this knife protect from aggressive over cutting that can be dangerous. ... show more

  • Not my favorite, but definitely a solid high quality chef knife

This is an excellent knife of obvious high quality, but nevertheless it isn't the first knife that I reach for day in and day out. The blade is made of a hard steel and comes very sharp, though I noticed that the blade was finished at the factory with a rougher stone than any of the other knives I've picked up in this price range. It's still very sharp, but I expect that the blade will need sharpening sooner, and more attention overall before it performs as well as other blades that were finished with very fine grit stones at the factory. The handles is made of a nice looking wood (apparently pakkawood is a composite wood with some superior qualities to a normal hardwood handle), and the "ergonomic" handle is certainly comfortable. I don't find myself partial to the ergonomic handle, preferring something a little more traditional, but I can still see its appeal. I think the reason this knife isn't my go to is that the weight is forward of the hilt, or blade heavy. That seems to be the case with most of the chef's knives that I've picked up, and is considered a desirable quality to some. I prefer the weight to be balanced just behind the hilt, or slightly handle heavy, I find that gives me more control with delicate tasks, and I don't mind producing the force necessary for heavier tasks, or grabbing a heavier knife when necessary (which is almost never). The weight is not very far forward of the hilt, only a fingers width, and that could well be the most commonly preferred balance in a chef's knife. Hopefully I've given you enough information to decide whether that's right for you. ... show more

I am not terribly informed about knives. I know Wusthof and Henckels are really good (at least the higher end ones) but there are so many other brands out there that any random set could be great. I wasn't sure when I first looked at them because they don't appear to be "full tang" and I was always told that good knives must be full tang. Once again, with so many brands and modern manufacturing, I don't know. I do know that these are very attractive and feel well made. The wood handles are very smooth and the wood is very pretty. I do like this style handle better than the old whatever brand "full tang" knives I have now. We had hamburgers for dinner the day I got them so of course I had to test them out. The large knife went right through the tomato with no tearing, ripping, or mashing. I got beautiful slices right off the bat. As with anything, time will tell how well they hold the sharpness and if they get the edge back with sharpening. That being said, mine are probably 20 years old and I can still get their edge back with sharpening so unless the metal is just extremely soft, I'm sure these will hold up great. ... show more
