Description

Top-of-the-line MIYABI Birchwood is a work of culinary art. Both blade and handle are crafted from the most precious materials, which shape their striking appearance. More than meets the eye, the potent core of SG2 micro- carbide powder steel is protected by 100 layers of steel. MIYABI's innovative, ice-hardening process locks in the long-lasting sharpness of the CRYODUR blades. Beneath its beautiful exterior, the flower Damascus pattern provides added durability. The scalpel-like blade is complemented by an equally striking Karelian (Masur) Birch handle. A prized material for knife handles, Karelian Birch is also the only wood ever used in a Faberge egg. Exquisite and ergonomic, MIYABI Birchwood knives feel as good as they look. Handcrafted in Seki, Japan

  • Almost Perfect
Style: SG2 Chef's Knife, 6-inch
This is a much better than average knife. Pros: Blade narrows toward the tip. Wood handle is grippy when wet Comparatively light Good blade geometry Comfortable in the hand Good knuckle clearance Cons: Just a little bit thicker behind the edge than I would like to see. • Nice craftsmanship
Style: SG2 Chef's Knife, 9-inch
Pretty darn sharp. No complaints so far. Handle and blade are beautiful. Blade is very thin and light weight and feels amazing while using it.

  • This knife is a work of art.
Style: SG2 Chef's Knife, 9-inch
Ok, so this blade is a work of art. The detail is simply amazing. Shown side by side with my Miyabi 5 and 1/4 inch prep knife, and it's a monster, practically a katana, lol. The blade is razor sharp. Time will only tell if it'll hold it's edge, but if it's anything like my prep knife, it'll be just as solid. If you need a large kitchen knife and don't mind paying for the best, then this is your knife. ... show more

  • Sad cause I was looking forward to using it
Style: SG2 Chef's Knife, 9-inch
I bought this knife twice and both times it came in as an 8" and clearly says it on the knife as well. Won't be purchasing again. Sad cause I was looking forward to using it. Guess I'm going to sit la table might be more expensive but at least I know I'm getting what I want
