I ordered this for use by our resident chef, aka my wife. She does the cooking while I specialize in the eating and cleanup. A fair trade in my eyes (and stomach!). I am impressed with this knife but, again, I'm an absolute rookie at using such tools, my ooohs and aaahs notwithstanding. It feels well balanced to me and fits well in the hand. Another reviewer had mentioned the handle was slippery and I can see what he meant, but my wife said it's fine for her purposes. It is definitely sharp. I aggressively took to slicing a carrot on one of our plastic cutting boards (I know, not really what it's intended for) and proceeded to create some surprisingly deep grooves. Maybe I should stick to butter knives! Tonight we're having steak and I've volunteered for carving duty. I fully expect this blade to be up for the task, even in my hands. Who knows, I might get used to this and actually become useful in the kitchen! Nah. All in all, this amateur thinks this Kuisine Kitchen Knife is perfect for home use by those who, like us, can't spell or even pronounce "charcuterie." Just wish I could drop it into the dishwasher. I love knives. Love them. So when I get a chance to try out a new kitchen knife, I am all in. This knife is well balanced and has just a tiny bit of flexibility. Great for every day utility in the kitchen. Has kept its edge for a few weeks with regular honing on a steel. Haven't had to sharpen it yet as I rotate all of my knives to have a sharp one at all times. I only sharpen my knives every 6 months or so as I have a small collection that allows me to cycle through them. I see no reason, from the time I have had this knife, that it won't last me a very long time. Handle and blade are well made and straight and is as sharp at the tip as it is at the handle. Knives don't have to be hundreds of dollars as long as they are maintained properly, especially for home chefs. Great buy! ... show more

I expected this knife to be my new "go-to" for everyday home cooking, however I have small hands and actually found the 6-inch knife to be a bit large for me to comfortably hold and use. Not the knife's fault, of course! It's just not the best fit for me so it felt like I had less control than what I'm used to. The blade is very sharp yet had a somewhat difficult time slicing onions smoothly. I grabbed my other knife that I usually use (which is actually dull at the moment) and found that it sliced onions much easier with less resistance. I couldn't figure out why since this knife is significantly sharper, then realized my dull knife actually has a beveled edge which may be why it performed better for this particular job. I had my spouse try both knives for slicing onions and we both had the same experience. After using, I washed and dried the knife by hand but apparently missed a couple of tiny water droplets on the blade, so a couple hours later there was actually little dots of rust where I did a poor job of drying. No big deal, the rust wiped off super easy with a little bit of Bar Keepers Friend. Again, not the knife's fault! Nice knives need to be washed & dried by hand, but sometimes you can get away with a little water drying on it or even ignoring the rules and using the dishwasher if you're a rebel, but this definitely isn't one of those. :) ... show more

    • Great quality at a low price

I was more than impressed with this knife! Given the price, I expected it to be too light with poor durability and a thin blade. What I got was a knife with a good weight, not too heavy and not too light - a thick and sharp blade which has a slight bend (which should reduce the chances of surprise fractures), and a good length and width! I immediately put this blade to the test with some thick cut paper (the instruction booklet was my first victim 😂) and it performed better than expected. Because the blade has some weight, I was able to cut through the paper with relative ease without any force. Applying a slight amount of force downward while cutting was required for the blade to really function well though. So it's not literally razor sharp, but it's just as good as any of my other chef's knives. And considering the rest of my comparable knives are ~$40-50, it's hard to argue against the value this knife provides! Edit: Just editing this review after fileting some salmon for the first time with this knife - it's BY FAR the sharpest knife I own. Cuts through salmon skin like butter! ... show more

I had a knife with a longer blade, which prompted me to consider this one when I came across it. It aligns with my expectations regarding the length, suitable for preparing vegetables and light meats. One notable feature I appreciate is the thicker end of the right-angled blade, a thoughtful design that helps prevent scenarios where, accidentally, the right angle could pose a risk to my hand or fingers. So far this knife is pretty good. The handle ergonomics aren't my favorite but they're not exactly bad. The curve of the blade is a bit aggressive, if you're used to more symmetrical chef knives or Japanese blades, this thing might annoy you some. The surprising thing is how sharp it comes. As far as sub $50 knives go, this is probably the sharpest I've ever used. It's "don't really need the slicing motion" sharp. The downside to this is if you're not one to maintain your knives or get them sharpened, this won't last too long with heavy use, so it's not necessarily a huge selling point. So far it's kept its edge fairly well with light honing for about two weeks, which is nice. I use my personal knives daily, somewhere between a standard home and professional kitchen. If you're looking for a new standalone chef's knife on a budget, this is a really solid choice. ... show more
