First off I’d like to say that this is a clone or copy of a Shun blonde classic knife, in which was inspired by the Miyabi SG2 birch wood from what I could see from market trends with knives like these, and I can say out of the box this Sunnecko knife is 8/10 sharp but fit and finish leaves some to be desired, the “oak wood” handle is NOT sealed or treated so I recommend sanding it down a bit with 400 grit sandpaper and soaking with either linseed or mineral oil to make sure you get most lifetime out of the handle because from what I can tell the knife is NOT full tang. At the area on the spine of the blade where you pinch grip is also very angular and sharp but the knife is thin enough to not agitate my callous, the choil and “Ricasso” for lack of a better term is also not rounded, so if this is a turn off for you to take care of then there you go, but the THINNESS of the knife is what gives it its performance in my opinion The original edge has a pretty prominent “shoulder” so it made cutting things like citrus and leafy greens feel a little hard to cut through, even when sharp, i thinned the blade behind the edge and gave it gliding performance, followed by a #2000 grit edge, then a leather strop. Today with this one knife I: cross cut and chopped one #40 case of romaine lettuce with pretty consistent cuts, chopped a half case of half moon Persian cucumbers, prep for tuna salad which was minced celery and onions, prepped a parfait bar and fruit platters for 60, and biased sliced 8 flank steaks and 18 chicken breasts. This is a great knife with a little TLC, again out of the box it might not last as long through some rough paces but you find your value how you work with the knife. I bought two! This was a great value knife. It is my go to for cutting anything. Potatoes, carrots, squash, chicken. It is nice and sharp and easy to cut anything. The wooden handle is a bit smooth and I would probably like bit more curve in a handle for better grip. But really this is great knife.

Nice knife the only issue I have is while I’m cutting meat. If feels like while I’m cutting I can not grip it that well. It rubs on my hand, and makes it feel like it’s going to blister. I make a lot of jerky so have been using this knife a lot. Sharp. Good knife for the value
