The OK Bronco is a phenomenal cooker. I stepped away from the world of smoking when I moved out of state and recently jumped back into smoking foods again. So this thing is a beast! She holds temp like a champ and can do a mixture of 8" splits with charcoal brickettes without issue. I was nervous about the heavier blue smoke boardering on white, however, this did not add any bitterness to the meat at all! This is because of it's highly efficient airflow design, kinda like if an offset had a tall stack and wide air intake. So about 7 lbs of Royal Oak charcoal brickettes and four splits lasted 14 hours which saves you a ton on fuel! Just be sure to light at the center of the coal tray. The best part is it does not leak any smoke! Now, it's important that you seal the two barrel halves and the air intake tube connecting at the bottom barrel with Lavalock Black RTV Silicone. Also coat the inner bolts where the two barrel halves connect and the three inner bolts of the air intake at the bottom barrel. This is because it will leak the avacado oil from the burn in and will leak rendered fat. Next, you want at least a 12" shallow pizza pan (plate style) because the drip cup will overflow with large fatty items like brisket. Also, the thermostats are NOT calibrated as they claim, so you will need to do this yourself. Just use pliers on the stem and apply enough pressure to hold the stem still while you turn the main display. Do these things and this will be a frustration free top notch smoker for years to come! The only two recommendations I would make to Oklahoma Joe's / Char-Griller is to get rid of the removable drip cup, keep the recess and use a side valve instead. Then replace the current thermostat with an adjustable one. This will make for absolute perfection! In any case this smoker is worth the investment, and if you do it right, by taking it lower and slower, you can achieve those offset smoker flavor profiles. ... show more

I had no idea how a "good" smoker would change my meat smoking game. I rarely have to adjust the vents, holds temp extremely well, reacts almost instantaneously to opening/closing the vents and produces a nice flavor unlike any of my other offset smokers.

  • A Very Heavy, Kind of Expensive Trash Cash

The body of the smoker consist of two sections. These sections are meant to be screwed together. The problem, is that the holes are so misdialed that aligning them is virtually impossible. I could get four bolts in, but never all six. I finally took my power drill and enlarged the holes to compensate for the misalignment. This allowed me to finally assemble the unit. Obviously, you shouldn't have to modify a new unit in order to assemble it. After all that, the temperature gauge was missing, so I'm totally unable to use this smoker--leaving me with a very heavy, kind of expensive trash can. ... show more

  • Initial burn went well - weird packaging event

Assembly went well Except I began to get pretty tense when the axle was no where to be found. Finally in desperation I tipped the assembly on its side (you are supposed to assemble this while it rests on its lid) and the axle was under the grill. You have to have the axle BEFORE tipping it right side up. Someone was packing this grill had to do this on purpose - every assembly video I watched this was not how it goes. I had my initial burn in and it went well, the temp wide open hit well over 475. I dialed it back and sprayed cooking oil on the inside lid and it cooled to 280. It does seem small to smoke ribs horizontally if that’s what you want to do so vertical seems the way to go unless you trim them down. Still that missing/hidden axle truly pi$$ed me off. ... show more

  • Easy as it gets without going pellet.

I like to mix lump with Kingsford charcoal for extra flavor. Add 3 decent size chunks of wood and it comes out awesome with lots of compliments. You'll see complaints of the temp gauge being inaccurate. I found the problem to be where the heats coming from. If it's burning more on one side and your probs on the other side its gonna be different. When I have it over the gauge they reads the same. That's why pros have multiple guages. All grills have hot spots so have your second thermometer on the other side and meet in the middle. It's easy to dial in temp. 1st run ran a little hot the 2nd I had it holding at 225 for the 8 hours needed with little effort. Lots of youtub videos to help if needed. Well built, beginner friendly with much better flavor than pellet and so much easier than off set smokers ... show more
