I ordered this knife after searching the term "left handed chef knives" and this came up. Nothing is actually WRONG with the knife, but Amazon let me down because this knife is for right handed cooks only. It is so precisely balanced and sharp that it presents a danger to left handed users. This is a all-purpose knife. It's total length is 12.2 inches, and the blade length is 7.3 inches. It is made with high carbon steel, full tang, great balance and a flat spine. It comes with a cleaning cloth and a beautiful simple leather sheath that is well sewn and reinforced with rivets. It is called a boning knife, or osteotomy knife. (I had to look up what that means, and it means to surgically remove bones.) I don't know about any of that, because I am using this as a multi-purpose camping knife. It has a wonderful sharp edge and being high carbon steel will be easy to throw a spark. It has great balance and weight. I'm not particularly fond of the textured part, but that's okay as it adds to the interest. I'm pretty sure you could safely baton with this if you wanted to. It is a little long to be an EDC knife, but other than that, it would work perfectly. You could cut vegetables with this knife, and also butcher small game. I cannot speak to the culinary aspects of this knife, other than it is easy to sharpen and holds a sharp edge. This is a handsome knife of excellent quality and I am happy to have it! ... show more
