  • Unimpressive but workable
Style: 4.5'' Paring Knife
I'm reviewing the 4.5" paring knife. Overall not very impressive. The blade came bent and when I bent it straight I could hear some internal cracking which is a bit alarming. Don't know if it was the steel or the handle. The blade.. eh. Just because something may be 440C doesn't mean it's been heat-treated all that well. At this price-point this isn't 440C or it's mediocre 440C. It's just economics. The bolster has obviously been sintered or welded on, it's not one-piece forged construction. That's not surprising for this price-point but the fit and finish are not even as good as the cheap Tuo I bought recently. The Tuo a surprisingly impressive $20-something knife (despite micarta handle) while this is not. I'd be surprised if this is full-tang. No way to really tell but the balance point tells me it's not. The handle may be rosewood but it comes barely stained and looking dry and wan. It looks nothing like the photos. I re-stained it myself to make it look halfway decent. Factory-sharpening was what you'd expect. No major flaws but nothing great. I leather-stropped it to make it decently sharp and will probably re-profile the blade into something more Japanese as it's a very Western profile as-is. The plastic sheath has an awful red felt-ish lining that comes off in balls of fluff. If it gets even slightly damp, it will peel off instantly. Since rosewood has been banned in international trade for years, these have either been sitting in a warehouse for a decade or they don't use actual rosewood for the handles. ... show more

  • Great quality for the price

I first tried using the knife to slice russet potatoes. The knife didn't want to cooperate. I have to believe the knife's lack of initial sharpness was an exception. With the 440C steel sporting a Rockwell hardness of 59-60, I thought it would take forever to sharpen it. But it took only a few strokes of sharpening and honing to make it super sharp. What a beautiful piece of cutlery! I've ordered the bread knife in this line. Some may prefer the Damascus steel in the new Shogun line, but I'm not in that park. This might easily become your go-to knife rather than an 8-inch chef's knife -- lighter with more precise cuts; it certainly has become mine. ... show more

Very nice finish but like other reviews, it was not even sharp. If it was ultra sharp, it should have been able to slice a paper sheet with easy. However, one I received crumpled it instead when tried. I could have sharpened it but decided to return it because it was not comfortable holding it - unbalanced, and the handle was not ergonomic in my hand.
