  • So much better then those black plastic ones.
I initially tried one of the black plastic ones and it was warped on one side and didn't work at all and it was too big for my smaller knives. These actually work like they are supposed to and you get 2 sizes which is great. These types of guides, in general, aren't perfect though they don't work well on curves but for what they are, these are high quality and work well unlike the alternative plastic ones. ... show more

  • Tremendously helps with knife sharpening.
One of the reasons I've always shied away from using a sharpening stone on my knifes is I never trust myself to hold the blade steady at the proper angle. I used the larger Chroma ST-G sharpening guide on a Chicago Cutlery, Santaku chef knife and spent about 45 minutes sharpening on a 600/2000 whet stone. Now I've got a good, clean, even edge on the blade and a quick test run on an onion had me making slices and dices with ease. The smaller guide fit perfectly on a paring knife I had and I spent another 45 minutes or so on that knife and it helped me get that knife razor sharp. I used it to slice through a ribeye steak and I was able to make thin filet slices with one stroke of the knife. I can see where the grinding of against the stone has wore down the metal somewhat but it looks like it'll hold up well enough to do a 2-3 more sharpening sessions. I would say for the price that it pays for itself in the level of precision and ease it offers with sharpening a knife. More importantly it is a good teaching tool for developing the type of muscle memory it takes to eventually start sharpening a knife completely free hand. Of course, I've seen video of chefs even say that using a guide is even better than there free hand technique. So, buying replacement guides in the future at the cost of just $10 bucks seems reasonable to me. ... show more

Really helps in getting the correct angle on asian knives. Works best on the straight edges, the curves and points of knives takes practice. Someone before mentioned needing a wider sharpening stone and I agree. I may try and glue 2 stones together as they did. Some also mentioned that these guides marked their knives, I have not experienced that, my guides have a plastic insert which gripes the blade. My one concern is that the guides themselves, which are stainless steel, will wear away from contact with the stones. Only time will tell that tale. ... show more

  • Transformed the way I sharpen knives!
This little device transformed the way I sharpen knives. After sharpening for many months on whet stones and only reaching decent but not excellent results, I saw a knife sharpening instructional video by chef Mino Tsuchida who recommended using a guide - at least until you learn how to keep a steady angle. I immediately ordered these guides, and boy have they helped me! Using this device allows me to reach a level of sharpness I have not been able to achieve prior to this, keeping a perfectly consistent angle along the entire blade. Consistency is at least as important, if not more important, than the angle. This allows me to sharpen my knife (8.5" chef's) sharp enough to shave hair off my arm at ease. I suspect that those who are giving this guide low ratings don't really know how to use it. The key is not to place it snug along the spine of the knife, but, rather, place it such that it's perpendicular to the blade, somewhat protruding outwards off the spine. This little distinction is critical. I learned this from chef Tsuchida, in a clip called "Knife Sharpening With Mino Tsuchida". You might want to watch it, as it will provide you with a wealth of information in a clear and concise manner. ... show more

I am 79 years old, and have never been able to sharpen my pocket knives and hunting knives as sharp as a razor! I read about sharpening, and read where the angle, 15 to 20 degree angle was critical in sharpening a knife razor sharp. Keeping this angle constant is critical. So I bought a set of these guides. My first try on my Barlow pocket knife was amazing. I sharpened it on the rough side of my stones then some on the fine side. It SHAVES!! I would never be!ieved it.
