It does an excellent job at sharpening. It is much bigger than normal consumer units. Nice concept to change sharpening modules. Wish they offered the 15 deg module as the included one as an option. I now have the 20 deg module that will sit in a box forever.

Very superior to all the rest of the electric sharpeners I ever had. With the 3 interchangeable modules makes it a great investment. I was able to fix a 2mm nick in one of my Japanese knives in less than 10 minutes. And in converted a serrated knife to a regular Asian knife in just a few minutes. I purchased this to replace a Chef's Choice 112 sharpener that I had for years. This model puts a much better edge on my knives and I like it much better. A little pricy, but I doubt I will ever need to replace it.

After 20 years of aggravation it was time. After 20 years of wedded bliss to a woman who believes that dull knives are safer than sharp knives..... it was time. Time to drop serious green on a serious knife sharpener. People, I'm not saying this sharpener is worth every cent but I am saying I will never again cut with a dull knife after using this bad boy.   • Nice knife sharpener -- but it should be at the price they're charging

I had to think a long time about buying this sharpener. I was taking my knives to a professional knife sharpener ($3/knife) and calculate I'd need to use this sharpener for the next 20 years or so , to offset the cost ($500). What finally persuaded me was the convenience -- I no longer had to hunt down the mobile knife sharpener, and I could also loan this unit out to my relatives. It puts a nice edge on quality kitchen knives. There are still problems like bolsters (that's a kind of guard next to the handle on Wusthof's, Henckel's, etc. ). Someone with an open sharpening wheel and the skill can address that. The Chef's Choice - not so much. There are also the Japanese knives, with a much steeper angle - you have to buy a separate sharpening module if you've got those. There are 3 sharpening stones/guides in the module -- one for really-out-of-shape knives, one for well-kept-up-knives, and a stropping blade. Slowly and evenly pulling a knife through the guides produces a nicely-sharpened knife. Probably not as wonderful as hand-sharpening using a stone and a little water, but it's way faster. ... show more

Fantastic sharpener. I've had other Chef's Choice models, this one though is way better than the $100-$200 models. Took just over a minute or so per knife to set up the initial edge. After that, just a couple of passes through the final stage gets them "scary sharp" as my wife says. No gradual dullness so far, we've had this about six weeks.
