Style: Coconut Manna Spread
If you are in the market for coconut manna, this is a good brand. It is fresh and flavorful and works well both consumed raw and used in baked or cooked recipes. There are also several other brands of organic coconut butter which are currently available on Amazon, including: Kevala, Artisana, and Jiva. I have included below my personal recipe for vegan fudge, which I successfully made using this brand of coconut butter. I have also included recipes for making your own coconut butter, coconut cream, and a recipe from Nutiva for making a conveniently quick and easy coconut milk from this coconut butter. GENERAL INFORMAION ON COCONUT BUTTER Coconut manna is most commonly called coconut butter. It is also known as coconut meat puree and whole coconut flesh puree. It is not the same as coconut oil but, similar to coconut oil, at temperatures below 80 degrees F., coconut butter is typically solid. Coconut butter consists of dried, rehydrated coconut flakes or fresh coconut flesh which has been blended until it is very smooth, with a consistency that is similar to nut butter. Also similar to nut butters, there may be a layer of oil floating on the top of a jar of coconut butter when first opened due to the oil and the ground coconut separating. To deal with this issue, you can place the jar in a bowl of hot water to soften it, then stir it well. I use a butter knife to stir it because, again similar to nut butters, it can be hard enough to bend a spoon. Here are some suggested ways to use coconut manna/butter: 1. Eat it straight from the jar, like nut butter. 2. Spread it on bread. 3. Spread it on a piece of dark chocolate. 4. Eat it drizzled on fresh, frozen or dried fruit. 5. Drizzle it on hot or cold vegetables. 6. Include it in a morning smoothie. 7. Include it in baked goods or candy. 8. Turn it into coconut milk. (See recipe from Nutiva below.) You might wonder what the difference is between coconut cream and coconut butter. I have purchased both of them, and the first thing I noticed about them is that coconut cream tends to be sold in a can, and coconut butter tends to be sold in a glass jar, unless it is in a very large size, and then it is offered in a plastic container. Coconut butter is made from the full-flesh of the coconut, whereas coconut cream is made from just the liquid drained away from pureed coconut flesh. (See below.) In recipes, it is possible to substitute coconut butter and coconut cream for each other and achieve a similar result. VEGAN FUDGE RECIPE Ingredients 4 cups powdered sugar 1/2 cup cocoa or cacao powder 5 tablespoons canned coconut milk (or use coconut milk made with Nutiva Coconut Manna—see below) 1/2 teaspoon lemon juice 1/4 cup refined Nutiva coconut oil 1 tablespoon avocado oil (OR another tablespoon of coconut oil) 1 tablespoon Nutiva organic coconut manna 2 tablespoons water 1 teaspoon vanilla extract Instructions 1. Place parchment paper in the bottom of an 8x6-inch or 8x8-inch baking pan. Grease the parchment paper and the sides of the pan. Set it aside. 2. In a large glass measuring cup, melt the 1/4 cup coconut oil in the microwave, 30 seconds on high. 3. Whisk into the coconut oil: the coconut milk, lemon juice, avocado oil, coconut manna, and water. 4. Get out a large microwave-safe bowl. Using a fine-mesh strainer, sift the powdered sugar and cacao powder into the bowl. On top of this dry mixture, pour the wet ingredients and whisk together until very smooth. 5. Microwave this mixture on high for 30 seconds, then whisk well until smooth. Repeat. 6. Whisk the vanilla into the fudge. 7. Before it hardens too much, quickly scrape the fudge into the prepared dish and spread it evenly with a spatula. Place it in the refrigerator to harden, then cut it into 20 small squares (approximately 36 grams each) @ 140 calories per piece. COCONUT MILK RECIPE (FROM NUTIVA) Ingredients 1/3 cup Nutiva Organic Coconut Manna 1 cup water 1/2 teaspoon maple syrup 1/8 teaspoon sea salt Instructions 1. Measure out the Nutiva Coconut Manna, then melt in the microwave on high for 10 seconds. 2. Place the Nutiva Coconut Manna, water, maple syrup, and sea salt in a high-speed blender and blend on high for 10 seconds. 3. Pour into a glass jar and refrigerate. COCONUT BUTTER RECIPE Ingredients 4 cups unsweetened, full-fat, shredded or flaked coconut 1 tablespoon coconut oil 1 teaspoon agave syrup or maple syrup 1/2 teaspoon stevia (optional) Instructions 1. Add all ingredients into a food processor or high-speed blender (I have a Vitamix). 2. Blend on high for 5-7 minutes, pausing every 60 seconds to scrape down the sides of the blender, until the mixture is smooth and creamy. 3. Transfer to a glass jar and store in the pantry. COCONUT CREAM RECIPE Ingredients 8 cups coconut flakes 2 cups pure water 1 tablespoon vanilla 2 teaspoons liquid or powdered sunflower lecithin (thickener) 1/2 teaspoon stevia (OR 1 tablespoon honey or maple syrup) Instructions 1. Measure out the coconut flakes into a large bowl. 2. Pour just enough very hot, pure water onto the coconut flakes to cover them completely. Let it set for 20 minutes in order to soften the coconut flakes. 3. Place 1/2 of the soaked coconut into a high-speed blender (such as a Vitamix) with 2 cups of water. Blend it on high until very smooth. 3. Add the rest of the soaked coconut along with the vanilla, sunflower lecithin and stevia. Blend on high until very smooth. 4. Pour this mixture into a nut-milk bag, which is placed in a large bowl, and squeeze all the liquid out. (See below for uses for the leftover pulp.) 5. Store this coconut milk mixture in a container with a lid in the refrigerator for 3 days. The oily coconut cream will separate out and solidify on the top. 6. Scoop off the solid cream from the top and leave the watery milk portion behind. Store the cream and the liquid coconut milk in separate containers and place them in the refrigerator. USES FOR LEFTOVER COCONUT PULP You can use leftover coconut pulp after making coconut milk while it is fresh, right after pressing it through a nut bag. You can also freeze the fresh pulp for later use. Or you can dehydrate the pulp and grind it into coconut flour. If you do not have a dehydrator, you can spread it thinly on a cookie sheet and bake it at 100 degrees F. for 2-3 hours. When it has cooled completely, grind it on high in a blender into flour. Store it in the refrigerator in an air-tight jar. Fresh or frozen coconut pulp tastes delicious in a morning smoothie, added to cold or hot cereal, or to vegetable dishes or vegetable stews. Learning experience for me. I was looking for coconut toast spread, like I had had on vacation, but apparently most coconut does not taste like much until they add a lot of sugar. And adding a lot of sugar to this didn't get me there. This high of oil content still makes the mouth feel dry. Natural coconut also separates a lot, a LOT, and there's no extra space in the jar to remedy the situation, so if you try you'll just slosh oil all over the place and be very frustrated. Pour the oil into a mixing bowl first, then chisel out the sandy manna, then mix it, then put it back in the jar. Or, better yet, put it in a sturdy bag-like container, perhaps one of those silicone ziploc things, so you can squeeze it a lot before each use. I'm not sure what manna is best suited for, but if I ever find out, this is a nice quality version of it. ... show more

This stuff is absolutely delicious. I can see I will have to be careful with this. It's high in calories and addictive. Stirring it was a chore, but not as hard as I thought it would be. I was boiling water for tea, which heated up my kitchen. I think that helped. Had to take a few breaks during the process to keep my hand from cramping, but it was definitely worth the effort. I tasted some before and after the stirring process. Both times it tasted the same, delicious. But before stirring, it was not creamy or spreadable. I originally ordered tropical traditions coconut cream concentrate and their gold label organic extra virgin coconut oil, the concentrated coconut cream was supposed to taste good but I found it to be too oily even after mixing good it still tasted oily, what I did was wait for the oil to separate from the ground up coconut meat and just poured it off into its own container and then I had a thick coconut meat substance for our smoothies that didn't leave an off putting oily aftertaste. So I decided to try the coconut manna after reading it's description and reviews I wasn't optimistic as the concentrated coconut cream was supposed to taste the way the coconut manna is supposed to taste too, so it got here today and I opened it up and it had a translucent look to it so I took a bit on my fingertip and tasted it and it wasnt too bad, no where as good as the description says it is, but better then the previous stuff we tried, so I made my daily health smoothie and added the coconut manna and the other normal ingredients we use and my smoothie was really really good, better then it was when we used the tropical traditions stuff. Later this morning my wife was ready for her morning smoothie so I started mixing everything into the mixer and got to the coconut manna and noticed it was starting to liquefy so I grabbed a plastic spoon to get a couple spoonfuls into the smoothie and it hit the hard part and broke the spoon, well the top layer was the coconut oil part, there was very little oil compared the the other stuff, and the meat was solid, so solid I had to use a butter knife to chisel out a couple good sized chunks to put in the smoothie, and then the last ingredient is raw organic cacao powder so I started the mixer up while I used the butter knife to break up the rest of the solid part and mix it back to a creamy consistency and now I'm hooked, once you get it mixed up like it should be I love it and so does my wife now, with the coconut manna and the cacao powder mixed in our smoothies it's amazing, we get a nice fruity strawberry taste on the front end and a coconuty chocolatly taste on the back end, our smoothies are the best they have ever been, tropical traditions boasted you could simply eat their coconut cream stuff by the spoonful but I couldn't do it because it's 70% pure coconut oil which doesn't taste very much like coconut, and I'm not into eating oil by the spoonful,l either, this coconut manna stuff once properly mixed has a thick peanut butter like consistency and I can definitely eat it by the spoonful, as a matter of fact I put a bit of the coconut manna and cacao powder in my wife's coffee this evening without her knowing It and she kept saying how good the cup of coffee I made her was, and when i asked her for a drink the cup was dry, she drank every drop because and I know it's because I had mixed a little cacao powder with the manna and put a bit in her coffee with her cream and sugar, she rarely drinks an entire cup of coffee, there's usually about an inch at the bottom of the cup she doesn't finish but with this stuff in her coffee she said it was amazing and I have to agree from what little bit I got to taste before she drank the cup dry.. Anyway if you want a really great coconut product with amazing consistency and coconut flavor then this stuff is what you want, I liked the tropical traditions stuff ok but only after I let the majority of the oil separate from the meat and poured it off it was a lot better, but still not quite as good as coconut manna, my wife had to tell me I couldn't have anymore spoonfuls tonight so I can't wait to put it in my morning smoothie again it's going to be awesome and it doesn't turn into a rock when it hits the cold stuff in the smoothie like the creamed coconut does... I just can't say enough about this product, it's everything I was hoping I would get when I ordered the tropical traditions concentrated coconut cream, but now it'll be a permanent ingredient in our daily morning smoothies and makes me want more of it now BC ... show more
