Description

This compact 3-stage electric knife sharpener for kitchen knives comes equipped with 100-percent diamond abrasives that sharpen edges faster and easier. Ideal for all 15- and 20-degree knives, including both straight-edge and serrated knives, this sharpener improves cutting performance by creating 2 distinct facets set at different angles to form a longer lasting, arch-shaped edge. The first stage sharpens 15-degree knives, while the second stage sharpens 20-degree knives. In the final stage, patented stropping disks apply an unparalleled polished finish to both 15-degree and 20-degree knives. The Chef’sChoice 1520 quickly and easily sharpens virtually all quality cutlery, including American, European, and Asian-style household knives, fine-edge or serrated blades, Santoku and traditional Japanese-style single-bevel edges, as well as sports knives and pocket knives. I'm very pleased with this sharpener. I was debating between this one (model 1520) which is a 2-stage system that can sharpen at 15 or 20 degrees, and the Trizor model, which is a 3-stage but can only sharpen at a 15 degree angle. I went with this since some of my knives are better suited for a 20 degree angle (plus the fact that it was on sale for 50% off, making it less expensive than the Trizor). Usage is about as simple as it can be, and the guides ensure the knife is held at the correct angle. The instruction booklet provides detailed instructions on how to use it for a variety of different knives, and how to maintain the sharpener (which is pretty easy). Operating sounds when a knife is not being pulled through are limited to a low hum. It does make a fair amount of noise while sharpening, but that's to be expected from any sharpener. The machine has a nice, solid heft to it. The results have been outstanding. I'm sure hand sharpening with a whetstone would be even better, but since I don't have the knowledge on how to do that properly (nor am I willing to spend the time learning) this hits the mark for me: easy to use, and the end result is a scary sharp knife. You can also use this to create a three-bevel (Chef's Choice calls it a "Trizor") blade by starting with the 15 degree slot and then using the 20 degree slot for just a quick pass before final honing in the third slot. Instructions are provided in the manual. I tried it, but didn't find there to be much difference in sharpness compared with just a plain 15 degree sharpening. But, it's nice that the option is available for those who want to use it or experiment. An excellent, easy to use sharpener that produces great results. Five stars. ... show more

We had a similar product in which the grinding wheels finally wore out, and they were not replaceable. After some reading, settled on this Chef's Choice model, and aer happy with it. As the sharpening technique was basically the same as the predecessor machine, no learning curve for us. In a nutshell, pull blades through steadily and not too quickly, minimum downward pressure and the edges will come out sharp and clean. Only change I would make is to put the knife type below the slots . Each slot it for a different type of blade. I have to look in the instruction book each time I use the sharpener. It does really sharpen the knives.

I'll be honest, this is a new product for me, but I've been using it for about a week. I purchased it because I had a whole kitchen worth of cutlery and as I've gotten older it's become harder to use my sharpening stone. At first when I used it I was having trouble getting the type of edges and refinements I needed for the 15° and 20° angles as I have both Japanese and American blades which is what attracted me to this item. After rereading the instructions and getting to know how to properly angle and position the knives the problems resolved. I was able to sharpen and hone my knives. More importantly, I had a few that I wanted a new blade angle on and surprisingly it was able to do it fairly quickly. I'm not going to lie, compared to something I do on my sharpening stone, there is no gadget that's going to compete, but I can get the majority of what I want done and use my efforts for the more precious blades. I would recommend this for a person that has some pre-existing knowledge of how to sharpen and hone blades, otherwise, it's a great tool. ... show more

I bought this both for the dual angle feature and that it does serrated knives. The instructions need to be carefully read to get the best sharpness for the type of knife. I have a one side grind for a Janpanese knife, thick and thin European and Japanese regular knives and several styles of serrated knives eg: bread, steak and meat. i have sharpened almost all the kitchen knives I have. I have an old Chef's choice that is maybe about 30 years old, still works but doesn't sharpen as well as it did. So old that it is one of a couple of their early models that don't have replacement parts for anymore. It has already proved to sharpen to great edge and I have no doubt will last as long as my old one. ... show more

Forget cutting paper at an angle or cutting the hair on your arm to test for sharpness. If a knife can cut straight down on the edge of a piece of paper, then its razor sharp. This sharpener can do it. I bought a sharpener that cost over 2x the price of this sharpener and I returned it because it wouldn't pass my test, even though I tried repeatedly to make it work.
