Description

James Beard Award winner Kevin Pang and his dad Jeffrey, hosts of the hit America’s Test Kitchen series Hunger Pangs, show you the way to delicious Chinese cooking in this accessible, funny, heartfelt cookbook. From American Chinese classics (General Tso’s Chicken) to Sichuan street foods (Dan Dan Mian) and Hong Kong dim sum favorites (Shu Mai), A Very Chinese Cookbook is ideal for both the Chinese food-curious and experienced cooks seeking a weekend soup dumpling project. Chock full of tips, techniques, stories, and friendly ingredient guides, with over 100 of ATK’s trademark rigorous recipes—and even a magic trick with fortune cookies—the cookbook in your hands is very practical, very personal, and very Chinese indeed. Two Generations of Storytelling: Jeffrey recounts a lifelong love of cooking that began in childhood, growing up in Hong Kong, cooking at his mother’s side, and exploring the street vendors and markets. Kevin dispenses practical wisdom that brings the recipes to life—why Beef Ho Fun is the mark of a great Cantonese chef; why Shu Mai is the world heavyweight champion of dumplings. Test Kitchen Techniques: From the basics of successful stir-frying to folding methods for Shanghai Soup Dumplings, careful instructions and abundant photos teach key steps. Chinatown Shopping Guide: From choosing the right soy sauce or vinegar to buying fresh noodles and seeking out superlative Buddhist-style chickens, let the Pangs be your trusted guides. Read more

  • Great, well organized cookbook with a wide variety of recipes
Beautifully bound cookbook on high quality paper. And, according to another reviewer that reported this book has no index, I dispute that. Am including a photo of 2 index pages. The entire index is well organized as is the contents. This unique Father-Son writing team has done an excellent job in developing this top quality cookbook. The writing and instructions are very easy to follow. These authors are very experienced writers and have shared a lot of interesting family stories along with good family recipes that have been handed down from many generations. Those give the readers better insight into the how and why the various ingredients create such delicious flavor profiles. I have a few other Asian cookbooks and this is among my top four. By the way, I have a cast iron-carbon steel cooking and usage mentor who is world renowned for his expertise in that field. He likes to buy Kindle versions of some cookbooks so he can bookmark a recipe then refer to the recipes in the supermarket to ensure he has all the ingredients. My suggestion, you could buy the beautiful hard cover version then take a photo of the recipe ingredients with your phone and use that photo while in the supermarket instead. Great book that would make excellent gifts. ... show more

  • Love this cookbook
I’m fortunate to have a large Chinese grocery store 4 blocks from home, so ingredients are easy to source. There are indicators on each recipe as to the difficulty level, I would consider myself intermediate to advanced as I have cooked a lot of Chinese recipes over the years, but I would say you probably need to be at an intermediate level to use and understand this cookbook. The recipes I’ve tried so far are awesome! I was particularly interested in the dim sum recipes and this book has lots of them with picture pages on how to fill the wrappers which really helps, I love ATK books which I have several of, highly recommended for the intermediate cook! ... show more

  • Best modern Chinese Cookbook!
The technique is the most important in this book. Best new cookbook I have seen in a long time. The recipes are user friendly, ingredients are mostly available in the store or on online in a pinch. I am having a great time with this book and highly recommend to anyone that enjoys Asian cuisine.

  • To Keep It or To Not Keep It???
I simply adore Chinese cuisine. Luckily, I live in the SF Bay Area, home to many superb Chinese restaurants, many of which I visit often. Did I need this book?? A big NO. When it arrived, I set it aside for a couple of days, then picked it up, ready to give it a look (already thinking “it’s going back”). Then I saw the recipe for Singapore Rice Noodles; then I saw the recipe for Sichuan Green Beans; then I read the blurb on proper etiquette in a Chinese restaurant—and I was hooked. This book ain’t goin’ nowhere. Will I ever cook from it?? Maybe not, but I will marvel at its numerous photographs, carefully study its detailed cooking instructions, chuckle over the dry senses of humor of the two authors, and gaze devotedly at the feasts contained herein. That’s pretty hot entertainment for a 74-year-old retiree. Truthfully, since I cannot find a restaurant with tasty Singapore Rice Noodles, I will most likely try my hand at cooking them at home. As for those green beans, they look simple, so why not? Who knows where things might go from there? This book is delightful, informative, and as you can see, motivating. Do yourself a favor and add it to your cart. I can guarantee some smiles, and maybe even some good times at the stove. ... show more

  • Great book but recipes are advanced
This has a lot of great recipes. It does call for a lot of items that are hard to source. Not a book for someone who is not very advanced.

  • This is a Great Cookbook
Great gift and amazing recipes. The cookbook goes through tons of ingredients techniques and really sweet stories from the Pang’s. Definitely recommend this cookbook for any level of cook looking to get into Chinese cooking or expand their abilities

  • Not your average Chinese cookbook
This is so much more than a cookbook. It is loaded with information about Chinese cooking, cultures, personal stories, recipes and beautiful photos. The stories of this father and son duo are heartwarming and funny. Together with the photos, I can feel their passion about Chinese cooking. I like the visual guides they have throughout the book, like Dumpling Folding or Preparing Lobster for Stir-Frying. They make it easy to understand and follow. I can't wait to try their recipes. BTW, thank you for not including any artistically perfect photos which are impossible to recreate! ... show more
