  • Great Cookbook
If you are looking for a cookbook with easy but very delicious and healthy recipes, this is the one for you. I bought 2 cookbooks at the same time, this one and also the 30 Minute Mediterranean Diet cookbook by Ball and Segrave-Daly, and have cooked several recipes from each book. I can easily say that the Weekend Mediterranean Kitchen has the most delicious recipes. I know tasting food is subjective, but for me and my family, the dishes in this book are tasty and flavorful while several from the 30 Minute book were not terrible but too bland for us. We enjoyed many more of the meals from this Med Kitchen book. In addition, the recipes are easy and usually complete in far less than 45 minutes. I'm not a huge salad fan, but have loved the 2 salads we've tried thus far. The salads were not just your average lettuce and dressing but had a big variety of flavors and textures going on with herbs and crunchiness! Our favorite main dish is One Pot Paprika Chicken with Olives and Orzo. Sooo good! 😉 Hope you enjoy this cookbook as much as we have! ... show more

I originally checked this cookbook out from the library. My daughter and I spent time paging through, marking recipes to try, as we do with new cookbooks. We usually expect a few duds. Not every cookbook is going to have recipes that we completely love, but WOW! This cookbook has delivered! Every single recipe that we have tried so far is delicious! We renewed the book so many times that we ended up just deciding to purchase our own copy! These recipes are fantastic for weeknights. It's not a 20 minute meal that turns into an hour and a half of prep-time with too many ingredients. The cooking and prep times are really accurate, which means I can get a delicious dinner on the table quickly for my family. I also don't find myself chasing all over for weird ingredients. Now, having said that, I keep a very well stocked pantry, and I live in a city, so my grocery store has most things, but in general, I have had no trouble throwing these recipes together with delicious results. And if you're on weight watchers like me? Our favorite recipe is the Za'atar chicken skewers! It's zero points (if you swap thighs for breast), and if you don't feel like grilling, just throw it under the broiler for a great emergency meal that tastes like you spent all day on it!   • Not Exactly for Weeknights
This is a nice cookbook...not my favorite, but good. There’s a good mix of recipes - the Turkish Lentil Soup is absolutely delicious, the Baked Orzo and Artichokes with Halloumi and Tomatoes is a go-to when I want comfort food, and the Pistachio Pesto is soooooo yummy! And the Beet Infused Couscous is delicious AND visually stunning! The book description indicates there are 80 recipes for everyday cooking, but this includes sauces, beverages, desserts, and appetizer. Realistically, there are recipes for about 45 meals. The recipes are fairly simple to follow, but they aren’t quick. Most of the dishes take less than an hour from start to finish, but if you don’t have tons of experience in the kitchen (like me), you may need to spend a little time looking up how to do things like preparing fresh fennel for braising, or what braising even means! A helpful overview of items found in a Mediterranean pantry is provided, but the author only minimally explains the ingredients and how they’re used. I’ve had to spend time educating myself on things like whether green lentils can be substituted for red (NOPE...definitely not) and if fresh fennel bulbs are worth the effort to find (YES, totally worth the effort). Lots of the ingredients were new to me, but with a little effort I’ve been able to find everything. TIP: If you have access to a Whole Foods (or somewhere similar), they sell almost any spice, bean, nut, grain or seed you might need in bulk...I literally spent 34 cents for the dried mint that one of the recipes required!   • Delicious recipes!
So far I have made two of the entrees (the one pot paprika chicken is pictured above) and one appetizer (hummus). Everything turned out great! The recipes were easy to follow and there are pictures for every recipe, which is something I really appreciate 👍 Leafing through the book I see many more recipes I’d love to try - with most cookbooks I usually don’t wind up making many of the recipes but with this one I have a feeling I’m going to want to try most of them! This cookbook I believe is about as authentic as it gets in respect of Mediterranean cooking, and although the author adds her own twist to many of the dishes they are good twists and still stay within the realm of ‘authentic’ in my opinion. This is not your run of the mill Mediterranean cookbook! And definitely not bland - everything here is very flavorful and colorful and looks delicious 😊 ... show more

  • Great recipes with photos for each
Why is it so hard to find a good cookbook? This is what a cookbook should be. The only con I have is that some of the recipes may take a little longer than I'd like and a good few have ingredients that may take some digging at a local grocery store. but this book has a photo for EVERY RECIPE! AMAZING! So many cook books don't do this. Food is a visual medium in today's world. So this book is awesome. Packed with healthy and delicious recipes with gorgeous photos to boot. ... show more
