You can see what it does just by looking at it. You break an egg into a bowl. You squeeze the fish and place its mouth onto a yolk. The yolk goes up into the body, and ALL of the white falls back into the bowl. You can probably separate a dozen eggs, thoroughly, in a couple of minutes.
