Oro Bailen Family Reserve olive oil is produced from 2 Family Estates: "Los Juncales" y "La Casa del Agua" in Villanueva de la Reina, Jaen, Spain. The Estates are situated at the foot of the Sierra Morena mountains, 400 mts.above seal level, and enjoys excellent weather conditions. The "Terroir" is affected by the Guadalquivir river valley that allows for abundant rains during the Spring and Autumn seasons with an average annual temperature oscillating between 16? C and 18? C. With the benefits of this optimal climate, Oro Bailen, takes care of its grove by using irrigation techniques that allow the trees to grow with minimum stress to produce fragrant fruits full of flavor.   • Nice pepper-like taste! Would like information on Hydroxytyrosol content.

I have read that the presence of hydroxytyrosols is a key indicator for high quality EVOO but it is hard to find EVOO producers on Amazon that provide hydroxytyrosol information. Here is what Drs. Perricone and Sears have to say about it. Hydroxytyrosol in extra virgin olive oil is only found in Spain and other parts of the Mediterranean. “Hydroxytyrosol is found in highest concentrations only in extra virgin olive oil that is obtained from olives grown in the Mediterranean region, particularly Spain. We don't know why this is. It might be the soil; it might be the particular type of tree. Even though hydroxytyrosol is found only in a few parts per million in olive oil, it is so powerful that it is probably the chief antioxidant in olive oil. Hydroxytyrosol slows the aging process in the skin by stabilizing the cell plasma membrane. Since it also prevents the oxidation of keratin protein, hydroxytyrosol makes the hair soft, shiny, and lustrous, and it prevents nails from peeling and breaking. Grassy, fresh, peppery finish. We LOVE this Evoo. Nice hostess gift too if you want an option other than wine. We don’t use this when cooking with heat, but when finishing dishes, like adding to dressing and topping soups to really showcase the flavor best.

I first tried this is a restaurant in London drizzled over fresh Burrata cheese and served on warm toast. Incredible!!! It tastes so grassy and green and fresh. And it's pure olive oil. No flavors added. Or needed! I do not suggest cooking with this but using it straight over veggies or cheese or straight from a dipping plate. It's is expensive but worth every penny. I have gone through several bottles of Oro Bailen, among other brands. It's one I can always rely on to be deliciously flavorful. As a premium olive oil, I do not use it for cooking i.e. with heat on the stove or in the oven, I use a quality but more common olive oil for that. The heat can destroy flavor nuances so it's a waste of an oil of this caliber. Instead I only use it as a flavoring ingredient such as with dressings, salads, chimichurris, dips, sauce or soup finishing, etc. Why this exact item on amazon? These fancy olive oils have an expiration date for a reason. They're still safe to use after they expire but the quality of the flavor degrades. Other listings don't necessarily specify which year's harvest the product being sold is from and you can end up with stuff that's past its prime. We just arrived from a wonderful week vacation in Spain (Madrid) where olive oil is the omnipresent king among the ingredients used in Spanish food. We were recommended by a friend who is also a Chef in an Spanish restaurant to taste one particular olive oil which he was very fond of: "Oro Bailen". Needless to say we fell in love immediately with this olive oil (do you believe in love at first sight?) very fruity and yet so intense in flavor. So much we liked it that upon my arrival in Houston we googled it and found that Amazon had it for sale. It is one of my wonderful times to enjoy this olive oil with toasted bread . I also love to add it once my pasta is done and ready to eat. I simply add some over the parmesan. Another way to use this olive oil is with fresh tomatoes and a sprinkle of sea salt. This olive oil is made to be tasted, enjoyed and loved.
