I don’t know if I really have to, but it breaks up the fibers, and makes the steak really tender. Personally, I buy a higher grade of steak, usually ribeye or New York strip, but I still use it on those grades. I would definitely use it on sirloin flank, and any lower grade to soften up the meat. It works great as a tenderizer.

I read many reviews about how sharp the needle are, and they are! Be very careful using this device and even more careful cleaning it. I had bought 4 T-Bone steaks, cooked two of them and they were so tough I couldn't eat them. I saved the other two and cooked them this past weekend. I used the tenderizer on both sides for about 4 minutes, seasoned them and cooked the same way as I did before. The meat was so very tender. This product works. But be careful cleaning it, I ended up with a couple of bloody finger tips. I don't like the hollow handle, water gets inside and I worry about mildew growing inside. I left it out a couple of days in different positions to make sure all the water drained out and it was completely dry. I wish they would make this with a solid plastic handle.

I bought this to try to tenderize some of the cuts of meat I eat which I felt were not as tender as could be. I recently used this on a pork steak and the results were great. Each bite was very tender. While a pork steak is generally fairly tender to begin with, not all parts are and this worked like a charm. I am going to try to it on other meats such as chuck roast (pot roast) prior to brazing and skirt steak. I imagine it will work great on those meats as it did on my pork steaks. I bought the regular and the size is fairly large. Not sure if the bigger size is necessary. This has a solid feel, not cheap made and the needles go into the meat with a little effort. You can see the hundreds of holes in the meat. I was worried about cleanup with flecks of meat getting intertwined in the needles. I simply carefully depress the plastic guide to expose the needles than rinse then place into dishwater top rack. Works fine. There are a few good video reviews on line, one in particular where a chef uses this type of tenderizer on several cuts of meat and is impressed with the results. Happy with this purchase and would place this into the category of "wish I would have bought this sooner."

This has been a great kitchen gadget to have to help tenderize the meat. Much better than using a knife. It is very light and easy to use and clean. The blades seem flimsy but they are actually pretty sturdy. I got the large one so the size is perfect.

I had one similar, but smaller to this one and I broke it. I didn't understand it didn't come apart. This one does for cleaning. Works super good! Sharp, effective and easy to work. Works great. Pain in the b to clean. Water gets in the housing very, very easily and stays in there. You have to take it apart to clean it. I already lost one of the tiny screws that holds it together.
