"Also known as a Nakiri knife. A Japanese-style square-tip knife that is great for chopping meat, root vegetables and big prep jobs. Popular alternative to the Santoku. High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a heavier-weight line for cooks who prefer hefty knives, its original knivesof which this 7-inch knife for precisely slicing and chopping vegetables is an examplehave thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. They carry a lifetime warranty against defects and breakage.   • This is a very very good knife
Having grown tired of knives that wont cut cleanly thru vegetables, specifically tomatoes, I decided to upgrade. The Global 7" knife seemed to get good reviews and was in my price range. I am so glad i did! The knife cuts cleanly thru tomatoes with very little effort. The metal feels good in my hand and is balanced well overall.   • One of the greatest knives ever commercially produced
I've owned this knife for almost seven years. For the majority of that time I've been a sous chef at a high end French bistro. I've been a knife skills instructor for culinary students, as well as a restaurant consultant. I've brought this knife to work every single day and it has seen countless food items, meat, chicken, fish, vegetables, fruits, you name it. This is always the first knife I reach for. I would rank this as one of the best mass produced professional kitchen knives of all time. It is a pure joy to use. It's a durable workhorse that holds an edge for as long as any knife I've tried. I put a sharper angle on the blade than came factory and if you have the skills to hand sharpen this to sub 10°, it's well worth it. It will keep the edge. The only downside of this knife is that you will not be able to efficiently work around bones that are in meat you'd like to save a whole cut. Overall an 10/10.   • LOVE Global knives, and this knife is spectacular
I've been using a Global Santoku for 15 years. And I adore it. I cook a lot of Asian-style dishes, and wanted to try a different knife for all the veggies that I chop each week. Tried a few $40-range nakiri's and did not like the feel of them in my hand. So, I splurged and got this knife. I'm loving it so much, I think my Santoku's a little jealous! I used a Wustof Classic Santoku prior to my Global, I also had a Shun chef's knife, but used the Global all the time! I have small hands, and the Global knives fit my hands super well. I know a lot of people are not into the dimpling on the handle, but I like the feel of it. I prefer the balance of Globals to other knives. And feel like my Global knives stay sharper longer than other knives. I appreciate this as I do a lot of cooking (former personal chef, I just wrote a cookbook, etc.) ... show more

  • Fantastic knife
I have had all of the favorite kitchen knives over the years, old German carbon steal, new German stainless, and even a few rather nice Japanese Nakiri knives of the same price as the Global. Really, I feel like my life in the kitchen has been wasted all of those years since I brought this knife into my life. It is the only knife I use now. It's ergonomics allow for the finest garlic to boning out a chicken, and everything in between. It makes prepping feel like sculpting, and never a chore just to get food on the table after a long day at work. The edge keeps beautifully, the balance and weight is perfect, and tall blade almost gives it a cleaver feel. Thank God my kids are finishing college and I can give them all of my old knives, and my home kitchen can simply have the best..... ... show more

  • Awesome knife for vegetable preparation
I saw the Pioneer Woman using a vegetable knife and decided to purchase one as my wife is constantly cutting up fruit and vegetables. I'm a big fan of Global steel & knives, so I purchased this off of Amazon. Out of the box this knife is extremely sharp. I sliced a tomato with it and there was 0% tearing of the tomato skin. Good handle and ergonomics, easy to see why this type of knife has become so popular. This has become my wife's go-to knife. I have some older Global knives and noticed that the G-5-7 Vegetable Knife isn't as thick. I'd estimate its about 20% thinner than my old Global 6" chef knife and 8" carving knife. Steel is still best in class IMO. I know from experience that this type of steel holds and edge extremely well, and also can be re-sharpened quickly with good results. I wouldn't recommend putting this in the dishwasher as that dulls the edge. Clean-up is quick and easy with this type of steel too. I still feel that Global makes the best kitchen knives, and these are good investments. ... show more

  • Very user friendly knife
The design of this knife is perfect for slicing and chopping vegetables and fruits like melons.. Very sharp and makes quick work of halving a large onion or dicing squash. Those who are used to a pointed chef's knife may find it a bit awkward at first but I find a pointed knife does not work as well as this one. The squared off end makes it easy to use both hands if necessary to attack a particularly hard vegetable with ease ... show more

  • Super Sharp
This is my second Global knife and they are both wonderful and worth the cost. I hope to gradually replace all my knives with Global.
