Description

Top-of-the-line MIYABI Birchwood is a work of culinary art. Both blade and handle are crafted from the most precious materials, which shape their striking appearance. More than meets the eye, the potent core of SG2 micro- carbide powder steel is protected by 100 layers of steel. MIYABI's innovative, ice-hardening process locks in the long-lasting sharpness of the CRYODUR blades. Beneath its beautiful exterior, the flower Damascus pattern provides added durability. The scalpel-like blade is complemented by an equally striking Karelian (Masur) Birch handle. A prized material for knife handles, Karelian Birch is also the only wood ever used in a Faberge egg. Exquisite and ergonomic, MIYABI Birchwood knives feel as good as they look. Handcrafted in Seki, Japan

  • Solid piece of equipment
The media could not be loaded. Bro this knife showed me things I did not know I would or could do. I’m here cutting so thin that when I go slow I can skin and cut potatoes so thin and make hash browns !!! I uploaded a video using the knifes for the first time after deciding to cook right and cut right. You won’t regret buying this piece of art as you see I even got a magnetic stand for it to hold it while I’m cooking and I’ll just clean that instead of the wall mounted knife mount. ... show more

  • Best decision!
I've been looking at these for quite a while. A friend of mine is an executive chef and owns several Myabi knives and convinced me it was worth the price. So glad I listened! It is absolutely beautiful and more importantly it works like a dream - night and day difference from the name brand I thought was good. I did treat the handle with cutting board oil/wax like several others mentioned to help protect wood long term. I have used this knife every day since I purchased it and absolutely LOVE it! ... show more

  • Well worth the cost
This looks and performed amazingly well. I did treat the handle which actually makes it look even better and ensures water won't ruin the handle over time. Extremely sharp, very thin blade and good hand feel.

  • the beauty of Miyabi Santokú sharpness
This Miyabi is the second one that i've ever used, and like my experience with the first... it was scary sharp, cutting with ease, and very beautifully crafted. Opening the box and seeing it for the first time, was a memorable experience as you see the handle & the design of the blade. There's nothing like it! I did my first "demo" with this knife on some veggies like bell peppers and a few onions. It really handled those ingredients with ease. I am so glad that I chose Miyabi... because the hype is real, and their knives are worth what you spend on them, as long as you take good care of them. ... show more
