Kopi luwak is brewed from coffee beans that transversed the gastrointestinal tract of an Asian palm civet, and were thus subjected to a combination of acidic, enzymatic, and fermentation treatment. During digestion, digestive enzymes and gastric juices permeate through the endocarp of coffee cherries and break down storage proteins, yielding shorter peptides. This alters the composition of amino acids and impacts the aroma of the coffee. In the roasting process, the proteins undergo a non-enzymatic Maillard reaction. The palm civet is thought to select the most ripe and flawless coffee cherries. This selection influences the flavor of the coffee, as does the digestive process. Ok science and facts out of the way, WHAT DOES IT TASTE LIKE. It tastes like a cross between a really good Hot Chocolate and a very smooth coffee. Honestly DO NOT ADD SUGAR OR MILK. You will simply ruin it. The coffee almost taste sweet anyways like a really good dark chocolate without the bitterness or astringency. The quality of this particular brand is good and as a picky coffee drinker I think the price vs experience was worth it. How do you make it? Well personally I am using a Breville Barista Express Espresso Machine. Can you use other ways? Sure maybe a pour over or, OR single serve pod system however using both of these techniques will not allow for maximum extraction (trust me this accounts for a lot of the flavor). So if you don't have an espresso machine personally I think I would pass if you do and have a traditional porter-filter, then you should be fine. Who is this for? True coffee lovers who like trying NEW things (and aren't easily queasy). It also makes a good joke if you want to watch the look on someone's face when you tell them what they are drinking. (This is the small print that I, nor the company making this, or Amazon, can NOT assume liability from what happens to you based off of other people's reaction/ temperament). Honestly if you never told someone and simply made it, they would probably think it was a Dark Hot Chocolate. I have bought it for 2 different friends for Christmas and have had several people over to my house for a tasting, and everyone either liked it or loved it. I would NOT consider this an everyday drinker but maybe an after Dinner Espresso on Holidays or Special Occasions. ... show more
