  • Perfect for the way I cook
I understand no one cookbook can be all things to all people, but this one hit the sweet spot for me. I work from home, and do little bits in chunks of time I have throughout the day. It takes just a few minutes to mix up some sauce, or take meat out of the package and salt it, or chop up some veggies. With all that done, it's a no-brainer to finish up dinner at dinner time. To be clear - this is how I was cooking BEFORE I got this book. So, this cookbook is fantastic for me as Gina has already done the work of dividing the recipes up into discrete steps and giving tips on how to store the parts for a few hours or days before making the meal. I'm desperate enough to feed my family actual meals that I don't care that much if they're healthy, so the fact that these recipes are centered around nutritious food is just a bonus. Even better is that they're delicious! We've had the ramen chicken salad (even my kids ate it!) and the food-cart style chicken and white sauce (THE BEST THING I'VE EVER MADE EVER - is probably an exaggeration, but it sure felt true while I was eating it. granted we stuffed her salad inside homemade pita bread, but the seasoning on the chicken and the tasty white sauce were the stars of the show.) I know enough about cooking to be able to read through a recipe and tell if its any good, and I'm confident we'll be eating a lot of recipes from this book going forward. ... show more

  • Very usable
Great recipes for not picky eaters. Lots of options to explore new flavors. Includes directions for how best to prepare it ahead of time and reheat for meal prep. Has a section for freeze ahead and left over options. Only 1 complaint, I meal prep for 5 days. I thought that was common. These meals are all 4 servings. Not a big deal, I just add a bit extra. ... show more

  • Delicious food you didn’t even know was healthy!
Gina is my go to for dinner recipes, especially since they are easy to follow, taste delicious, and so many different options! This book is no different. After having a baby, some nights I find it hard to figure out dinner, let alone what to make for lunch or breakfast. This book has so many recipes to help with that! Tons of freezer friendly, slow cooker, instant pot, quick and simple recipes that taste amazing and can help me throughout the week to feed my family, and my husband and 1 year old always loves the Skinnytaste recipes I make. Her recipes has also helped me in the past lose 50lbs on WW, which she lists all the updated points on her site, so I write them all in and it’s super simple for me to figure out my points for the day. Now I’m trying to lose that baby weight and I know this new cookbook of Gina’s will help me, along with her other ones that I still use daily!   • I don’t often leave reviews ..
I usually read a lot of reviews before making a purchase, but some of the the negative reviews I read regarding this book are mind blowing. I’m not sure what those individuals were expecting in a book.. but this book is absolutely phenomenal! I have loved just about all of Gina’s books. Not a fan of the Airfryer book but still plan to use some of it.. With that being said, the recipes in this book are tailored to my life. I generally follow somewhat of a WW diet/lifestyle, all nurtrition facts are listed at the end of each recipe, with serving sizes. Some of these recipes —YES— are repeats or recycled from her previous literature-but a small fraction.. All of the recipes are also listed with storage information; you can eat them at the time of, or make big batches, freeze ahead, or have small portions handy for the week with meal prepping. This is more of a MEAL PREP book, for busy lifestyles, not a FREEZER PREP BOOK, although some of these recipes can be frozen and she highlights those that can in each section - and even has a freezer meal chapter. If you’re looking for a freeze ahead specific book, this ain’t the one! This is for the individuals who may spend one night a week making their lunches and breakfast ahead of time with a busy life. Or it teaches those how to plan ahead for dinners so you have less kitchen time at the time of cooking! Hope this helps! ... show more

  • Some great recipes, but not my favorite of Gina's books
First, let me say I am a huge SkinnyTaste fan. I have all of Gina's books, follow her blog and, as an avid meal prepper, looked forward to this book. For the most part, it has met expectations. As usual, it is full of creative recipes and tips, including techniques and twists on classics that I would never have dreamed up myself. Pan sheet pancakes?? Mind-blowing! Stuff jalapenos with Italian tomato sauce? Another mouth-watering keeper! The book also contains recipes that will go into my rotation--for example, the Colombian-style cranberry beans recipe. I made these vegan (without the ham hock), and my Colombian husband went back for seconds and thirds, then wanted leftovers for breakfast. A cookbook that scores a rotation recipe (and such a ringing endorsement from my family) deserves at least four stars. However, there were a few misses. For example, the PB+J Healthy Oatmeal Cookies were a disappointment. Also, the section on bowls had some editing issues. For example, there's a suggestion for a bowl with air-fried tofu and tahini dressing, yet there are no recipes or preparation instructions for either. Sure I can Google recipes for these, but I would expect the cookbook to provide more guidance. Similarly, there is a recipe for a peanut-hoisin sauce, but no examples of how to use it. Again, a little more guidance would be helpful here. In spite of these shortcomings, this is a cookbook that I will get lots of use of, and I look forward to trying several additional recipes. Next up on my list is the Black Bean and Butternut Enchilada Bake, Chicken Larb Bowls, and Roasted Vegetable Lasagna. Again, Gina has given home cooks like me who try to eat healthy but don't want to sacrifice flavor a winner for a cookbook. ... show more

  • So far so good!
Got my book a few days ago and tried the slow cooker chicken enchilada bowl. I have never been a fan of slow cooker meals and was a little worried BUT this chicken came out so flavorful and yummy I will be keeping my slow cooker just for this recipe :) I am looking forward to trying out more recipes and will definitely report back! ... show more
