  • Works As Well You'd Expect. Reduces Espresso Temperature About 30F For 30sec Extractions.
Something like this used in a WBC years ago and I was excited to try them out. Some believe the volatility of some notes might "fizzle"or "cook" off if you let your espresso stay hot for too long. So... cool down the espresso to drinking temperatures right after extraction to preserve the flavors in the espresso all the way to your tongue and olfactory nodes. In the case of the Mutongli tool, freeze a metal gizmo, pull your espresso on top of said tool to cool down your shot, hope for the best. To the credit of Mutongli, the stainless ball is filled with a fluid that has a good deal of thermal mass. After freezing overnight, the ball still returns to a cold state after sitting in boiling water for 30s. Being spherical, however, there's only so a few seconds during which your espresso will contact the ball. In the 5 or 6 shots I tried, I managed a best temperature drop of about 30F. That still wasn't cool enough for immediate consumption, but it did reduce the wait time considerably. I have to admit this tool is quite dynamic to use. When it sits on your cup fresh out of the freezer, it looks like something has come from the ice age to impart awesomeness on your espresso. When the shot is finished, there's this ball of metal that starts to glisten as the espresso drips off. The glisten then fades as water condenses when the surface of the ball returns to a colder temperature. You could get a similar net effect for your espresso by simply freezing your espresso cups.... and then do some experimenting with different thickness cups to see which one has enough thermal mass to reduce your shot to drinking temps right after extraction, but that's no fun. This tool is not a "game changer" if you do this for a living, but it's definitely something you can use to impress those who don't have a refractometer in the coffee kit. ... show more
