Description

Tormek had made all kinds of jigs for sharpening knives. But longer, thinner knives presented a problem, and our customers who had those types of blades asked us for help. We’ve responded with the SVM-140, which is a knife sharpening jig specifically designed for those longer, thinner, and even flexible knife blades. Filleting knives, longer paring knives, or any type of longer knife can be sharpened with this versatile jig. It utilizes a larger support width (5 ½”), making it perfect for any knife with a length over 6 ¼”. You simply adjust the jig for the blade’s thickness, and set the angle. Everything locks into place, and you now have a solid, stable platform to perform your sharpening. Like all Tormek products, this is designed to give you the best edge while losing the least amount of metal, making your knives last longer. And that edge… dare we say you’ll be impressed? From the Manufacturer Tormek SVM-140 Long Knife Jig is developed especially for long, thin and flexible knives, such as filleting knives. Its larger width, 5-1/2 inches, stabilizes a long and thin blade and can cope with blades longer than 6-1/4 inches. It works in the same way as the SVM-45 jig but it is wider and therefore gives more support to long and thin blades. The jig is comprised of an adjustable clamp for holding knives up to 3/16" (5mm) thickness and an adjustable stop. You adjust the jig to the knife thickness with the screw and lock the tool by tightening the knob. The jig rests on the Universal Support, which is placed vertically for grinding towards the edge. The exact edge angle is set by rotating the stop or with the Micro Adjust on the Universal Support.

I have an expensive 8" chef's knife that I've never been satisfied with the edge on it. 5 minutes for setting up the machine and jig and my knife is like a razor. Easy to setup this jig and give very good results.

I have the SVM-45 knife jig as well and the build quality is awful on this one. It holds the knives, but the knife holding edges of the jig are different thicknesses. It feels like cast and polished aluminum or maybe pewter. The SVM-45 is far superior in build quality. I'm giving two stars because it works, but I don't think I got my money's worth like I did with the SVM-45. You get what you pay for, but I didn't with this product.   • Little Tricky, Very Solid
This jig takes a little more practice to properly use than the plane iron jig, but it still provides superb results. Long knives will tend to tip to either side of the stone, slightly gouging the working edge. Make sure you get a couple cruddy Goodwill knives to practice on. The learning curve is steep, but short. You'll be frustrated and then suddenly become a master. Stick with it, it will make you very happy. ... show more
