I’ve been purchasing high quality extra virgin olive oils for well over a decade now, after discovering its health benefits compared to the cheap olive oil found in grocery stores. I first found Kouzini several years ago and it has been my favorite ever since. I did verify that it was a 2020 New York International Olive Oil Competition (NYIOOC) award winner, taking a silver medal. Shortly after you eat any good EVOO, you may get a mild burning or tingling sensation in the back of your throat, often described as a "peppery aftertaste", and often accompanied by one or more coughs. This is from a type of polyphenol in the oil called Oleocanthal, which is a beneficial anti-inflammatory that is also said to help in clearing plaque from the arteries and assist in killing cancer cells. There are other healthy components besides the Oleocanthal as well. The polyphenol level varies every year due to several factors, one of which is the weather. I often contact the seller through Amazon mail to get the polyphenol level on the latest harvest, and it has always been high on Kouzini. The last time I contacted him regarding polyphenols, it was for the 2021-2022 harvest and was an exceptionally high 758 mg/kg. I really like the bag-in-a-box, having used it in 4 other brands of olive oil. In fact, I contacted the seller, I believe 3 years ago, asking if they would consider offering a bag-in-a-box option, so I was glad to see it eventually happen. It has many benefits. I have a two-level island, so place the olive oil at the edge of the upper level, with a 500 ml olive oil bottle on the lower level right under the spout. It dispenses easily and with no spillage. With the bag-in-a-box, the olive oil never is exposed to light. Additionally, as you dispense the oil, the bag inside the box compresses on itself so that the oil inside is not exposed to air. The bag is food-grade and perfectly safe. It does not leach any chemicals into the oil. Another advantage of the bag-in-a-box is that it is very sturdy. I’ve never had one get damaged. With the tin cans, it seems they can get dented even when expertly packed. For those of you that have never used the bag-in-a-box, I included a photo. Note the cardboard circle and green piece of plastic on the table. Referring to the photo, here are the steps: 1) Where the spout will come through the box, you will see a perforated area consisting of a circle and a tab just above the circle. Remove the circular piece only. 2) The cardboard tab above it should NOT be removed. The top of it is a hinge, so free the left, right, and bottom perforated edges, then lift upwards to free it without removing or destroying that top hinge. 3) With the circular piece removed and the tab above it lifted upwards, reach in the bottom front of the box and find the spout. The spout is attached to the bag, so don’t be overly aggressive with it (I have never had one break). Pull the spout out of the box so that the spout faces downwards. Secure it so that it sits in the area where the circular piece of cardboard was removed. 4) With the spout still facing downwards, maneuver that upper piece of cardboard so that the bottom edge of the cardboard is behind the top of the spout. Once positioned, you may have to twist the spout slightly, so it is vertical. 5) Referring to my photo, notice that green plastic piece on the table. That wraps around the spout and needs to be removed. Before doing so, also notice the green tabs on each side of the spout. Do NOT touch those during this step, as that is how oil is dispensed. Now, lift upwards on that small green tab on the bottom right of the spout. It should free up at the front perforation. Continue removing it from the perforation that goes all around to the left. The whole piece comes off and can be discarded. 6) That should be it for installation. To release the oil, pull up the two tabs on the spout. I’m right-handed, so do that by holding my palm under the spout, facing upwards, with my thumb pressing down on the flat green surface on the top of the spout, with my index finger underneath the right tab, and my middle finger underneath the left tab, then lifting upward.
