Smoked a Fresh Ham for New Years Day Dinner. It came out fantastic. I didn't think anything could beat smoked Pork Butt, but the fresh ham was spectacular. I didn't try to turn it into a ham by curing it or using a lot of spices. Just smoked it with some salt and pepper rubbed on the outside. Didn't smoke it to as high a temperature as pork butt so that I could slice instead of pull it. The maple gave the sliced meat a really nice flavor. the key to delicious king salmon..20lbs fresh alaska king salmon 2 cups salt 3 cups dark brown sugar 4tea spoons cure # 1 (pink salt) mix salt sugar & cure well... slather mix on fillets store in refer for 16 to 18 hours rinse well with fresh water let them air dry (if you have a walk-in refer and a fan so much the better) till there tacky and firm. smoke for 8 to 12 hours on he lowest heat possible 110 degrees or so (winter time is best) were not cold smoking them. forget ALDER and there you have it....good stuff ... show more

I love my Bradley smoker and the concept of the Bisquettes is fantastic. I have been using my Bradley smoker for over 8 years now with hundreds of pounds of bacon going through it. I still love everything about it and the flavors it produces but the price is to high now for the bisquettes. There are other alternatives out there at less than 1/3 the cost to operate. Still a great product but price is to high. Bradley needs to rethink their pricing to keep customers. ... show more
