  • Been making sourdough bread but first time using proofing basket

I have to let you know that while I've been making bread for two years this is my first proofing basket. It came with a scraper if you need. The proofing basket liner, near the center, arrived unraveled. Nothing a needle and thread couldn't fix. Only my pinky could pierce the hole anyway. I'm not very good at using this, twice I've failed. The dough stuck to the liner making it difficult to clean. Very difficult. This is what my ratings are based on. I'm not giving up just yet and I don't have another proofing basket to compare. The basket is sturdy and I have no complaints about smell, splinters, or nails but it was pricy. The online pictures show a seamless basket without joints. The joints do make the basket look cheap and I can see why some are upset. Seriously, I do not believe the joints will affect the final baked product. If I want to nit-pic, well the drilled hole for the tag could have been smaller and better positioned, but it is not that critical. Well, not yet, since I'm still learning to use the liner. So, how did I make my bread before? Formerly I folded dough on my Formica counter beginning at 30 min intervals. Kept the dough covered with a mixing bowl until ready to bake. With so much practice and failures I just know when the dough is ready by the look, feel, and bubbles. BTW, it takes longer for sourdough to rise if your kitchen is cold, such as in winter. My last fold, before baking, is placed on parchment paper to finish proof. Not before because the dough sticks to the paper and you willl not be able to fold again. The baked bread releases from the parchment nicely. Other than that I haven't tried the basket without the liner yet. One step at a time. I could share a picture of my beautiful bread with the parchment paper, but that would be deceiving because this is about the proofing basket. I have no pictures and you don't want to see the blobs I created trying to extricate the dough from the liner. I definitely need practice and seriously doubt there is anything wrong with the proofing basket. I see youtube videos of bakers working with the liners and baskets with no problems. I even watched the instructional video provided. Would I buy this again? Well, probably not. I thought I could make fancier looking bread, but I'm not convinced it is worth it. My proofing basket is very good quality and did not have any defects. I think the price for the cover and the basket is reasonable and the scraper is a handy tool. I already had a couple of scrapers, but they are so handy that I don't mind having another.

I would rate the product as excellent, as the included banneton and accessories are pretty much standard and exactly what you would expect, with no defects. It is fairly sturdy, about as well made as you would expect one to be, and in my opinion is a good value for the price. I probably would not have written a review, but a person from Bread Bosses (the manufacturer) contacted me directly by email to follow up and ask how the product is going for me, for a review, and if there is any way they could help with the new product. I think that is fine customer service, and a I appreciate the follow up. So far, I have made one sourdough loaf in it (only received it about a week ago after a very short turnaround, supply, ship time). The included scraper is great and works very well. If I were going to suggest one thing, it would be for them to include a small, short manual to describe how best to use tha banneton. For example, rice flour works best to coat the banneton with, not regular flour, as the very sticky dough starts to form gluten bonds with normal wheat flour. This caused sticking that somewhat damaged the loaf, and I would have loved to have known that before having to look on the internet. It cleaned easily enough, for what that's worth. Also, they include a cloth with it that I had no idea what its use is. I looked it up on Youtube, and some bakers like to use this instead of the bottom of the banneton so that they can sketch custom shapes into the proofing loaf (which will be the top of the cooked loaf). Again, I would have had no idea had I not checked on Youtube. Perhaps this is common knowledge among bakers. I will also note that they seem to have good customer support that would answer such questions. I do not think this area for constructive criticism affects that quality of the item, however, which I found to be quite good, and met my expectations and needs very well. ... show more
